Spaghetti with Garlic and Parsley

Ingredients
1 pound spaghetti
1 or 2 large bunch parsley, chopped fine
1 or more heads of garlic, peel and crush all the garlic cloves
1/2 cup olive oil
Grated parmesan cheese – optional
Salt and pepper

Directions
Boil pot of water and start spaghetti cooking.
In a large frying pan, cook the crushed garlic in the olive oil over medium heat until it starts to brown.
When spaghetti is done, drain and add to garlic with the parsley.
Mix thoroughly and serve immediately.
Add salt and pepper as desired. More pepper is good. People can add their own parmesan cheese as desired.
This is excellent with a bottle of red wine. And some roasted tomatoes – just cut tomatoes in half and cook in the toaster oven for a while. You can sprinkle some parsley and parmesan cheese on top of the tomatoes.
This also can be supplemented with chickpeas and/or breadcrumbs added to the cooking garlic.
