Steak Salad
My boys love this. It's great in hot weather.
Steak Salad
Early in the day:
1 pound of tender, lean steak (whatever kind you like the flavor of best)
cut up into bite size pieces and toss in a bowl with 1/4 tsp. ground pepper, 1/8 tsp. oregano, 1/8 tsp basil, 1/4 tsp chopped garlic, drizzle with 1 tbsp olive oil, cover and let sit in the fridge a couple hours.
hard boil 2 eggs, let them sit till later on
1 bag baby spinach
1/4 pound mushrooms (I like porticini)
2 scallions
1/2 cups croutons
dressing:
2 tablespoons dijon mustard
1/4 cup white vinegar
1/2 cup extra virgin olive oil
1/8 cup water
Saute the steak in pan, add 1/2 cup of water and let simmer until the meat is tender and the water cooks out. Very slow simmer.
Peel the eggs, yes, you really do have to tell some people to do this, and crumble.
wash and slice the mushrooms.
wash and chop the scallions.
just wash and drain the spinach. i like to dry mine with paper towels, don't like puddles in the bottom of the bowl.
toss the scallions and spinach, spread the mushrooms and eggs on top, spoon the steak mixture, still hot, over that and top with croutons.
whisk the dressing and serve on the side.
I use the left over dressing during the week for other salads or as a marinade. I just keep in on the counter, it's olive oil base, will gel up in the fridge.

Tilapia and Spinach

My healthy fast food for dinner tonight!
:)
Tilapia (Fish)
Olive Oil
Paprika
Milk
Butter buds powder
Pepper
Lemon
Skim milk
cheddar cheese made with skim milk
Fresh Spinach
And I can't tell you the amount I put of each item because I made it in about 25 minutes before going Spinning.
In large skillet saute onions in olive oil. Add the tilapia, garlic, lemon, butter bud, paprika and pepper. Sprinkle fish lightly with salt and lemon juice
Add some fat free milk (maybe 1/2 cup) over the fish, mix a little bit with the juices of the fish. Cook for about 10 minutes then transfer all that into a baking dish.
Transfer all that into a baking dish, arrange fresh spinach all over the fish and sprinkle any type of fat free cheese. I had low fat cheddar.
Cover with aluminum foil and bake in preheated 350 degree oven for 30 minutes.
You do not have to add the cheese, but cheese is the only food that I will never give up. I don't mind eating fat free cheese. I LOVE CHEESE. I just don't eat it very often.
I LOVE IT! That was my dinner tonight!
Turkey Meat Loaf

Okay guys here is a good one for ya!
This meatloaf is awesome, low in fat, high in protein and even incorporates fiber (what did she say fiber?!?!) all into one!
The taste is phenomenal and will guarantee this recipe as a staple in your diet! I tend to make this a lot because its easy and my family loves it.
I like to serve it up with some steamed broccoli or zucchini for a well rounded meal.
Turkey Meat Loaf
1lb of 93-99 percent fat free ground turkey
1/4-1/3 cup oats (really depends on fat content of turkey)
1/4 cup finely chopped onion
3-4 egg whites (again depends on ur turkey's fat content, more for leaner turkey)
2/3 cup Whole Wheat Bread Crumbs
1 teaspoon minced garlic
1/2 tsp black pepper
1/2 tsp Italian seasoning
pinch of salt
1/4 cup low sodium tomato sauce or slightly diluted tomato paste
½ cup of salsa
Preheat oven to 375 degrees. In a bowl, combine everything except the tomato sauce. Depending upon the fat content of the turkey, more egg whites will be needed to keep the meat moist. The oats serve to bind it and again more may be needed. Do not use instant oats, as they do not hold the meat loaf together. One all ingredients are mixed well, form the mixture into a loaf shape. Place into a loaf pan, or into a glass baking dish and coat the top with tomato sauce or tomato paste. Turn heat down to 350 degrees and bake until cooked clear through, about 45 minutes.
Bake 25 minutes uncovered at 375 degrees.
Remove Meatloaf from oven let rest for 20 minutes before slicing and serve with any vegetables you like.
Desert - Strawberries

I love this one!
I make it when I am having people over for dessert.

Calorie reduced cool whip (fat free)
Sugar free angel cake
I can eat the strawberries with cool whip alone but if i am having people over, then i get the Angel Cake.
I like to wash, clean and cut the strawberries, put them in a plastic container with sugar substitute and let them soak in the refrigerator at least an hour before serving it.
My Tuna Sandwich!
1/2 cup low fat cottage cheese
1 tbs fat free mayonnaise
a drop of sugar-free ketchup
1/2 cup chopped onion
1/2 cup sliced celery
1 small sliced tomato
lettuces on the bread
1 can albacore Tuna in water
2 or 4 slices of whole grain -whole wheat bread
This is about 316 calories, 37 g protein, 28 carbs and about 2 g fat..i think.
That will cover two meals for me.

Healthy Pizza

I needed to share this pizza that I made today for lunch!
I made the best pizza ever.
Preheat an oven at 450 degrees
I used:
Organic Whole Wheat low fat pizza Crust
Salsa
Turkey pepperoni low fat (70%)
Pizza cheese 2% (Mozzarella & cheddar)
Corn
2 tomatoes (in small pieces). I LOVE TOMATOES
Green peppers (small pieces)
Turkey Breast - Sara Lee 99% fat free
Put it in the oven for 8 minutes at 425 degrees
And ate 1/4 of it for lunch!
OH MY! You have to try it!
Next time I'll add onions, broccoli and whatever else I can find in the refrigerator!
