How to Get Sick: Keep It in Plastic
Before you store your leftovers in one of those disposable plastic containers, consider that these types of products release carcinogenic toxins into foods. The toxicity is increased when foods contain high amounts of water or when they are highly acidic. Water is one of nature's most effective solvents, and unfortunately it is quite effective at drawing out toxins from plastic.
According to The Safe Shopper's Bible, cling film contains carcinogenic by-products such as
DEHP — di(2-ethylhexyl)phthalate — and DEHA — di(2-ethylhexyl)adipate — while regular plastic wrap contains residual traces of vinylidene chloride.
If you wash and reuse plastic water bottles, be aware that repeated washing and reuse of disposable water bottles may accelerate the breakdown of the plastic, increasing your exposure to potentially harmful chemicals. Do not use plastic water bottles more than twice at the most. As for aluminum wrap, you already know it's bad. Some aluminum inevitably leaches into the foods it touches
Store It Safe
Just because you're avoiding plastic containers, it doesn't mean that your leftovers need to go to waste. Choose glass or ceramic containers to store your food. They won't release any chemicals, and they're microwave-safe. Another plus: You won't be cluttering up a landfill with all that discarded plastic.

Counting Beans
A friend from Michigan gave me this recipe and I loved it! Thanks Ruth!

6 Slices Canadian bacon, diced
1 Large sweet onion, chopped
1 large red bell pepper, seeded and diced
3 large garlic cloves, minced
1 tablespoon ground cumin
2 (15 1/2-ounce) cans cannellini
(white kidney) beans, rinse and drained
1 (19-ounce) can red kidney beans,
rinsed and drained
1 (15 1/2-ounce) can black beans, rinsed
and drained
1 (14 1/2-ounce) can diced tomatoes
with green chiles
1 (8-ounce) can tomato sauce
Heat a large nonstick skillet over medium heat. Add bacon and onion, cook until lightly browned, about 10 minutes. Add the bell pepper, garlic, and cumin cook about 1 minute.
Transfer the onion mixture to the slow cooker and add the remaining ingredients;mix well. Cover and cook until mixture thickens. About 3 1/2 - 4 hours on High or 7-8 hours on low.
Per serving (1 cup):
280 Cal, 2 g Fat, 1 g Sat Fat, O g Trans Fat, 9 mg Chol, 643 mg Sod, 47 g Carb, 12 g Fib, 20 g Prot, 145 mg Calc.

Protein Muffins!

Buckwheat Flour
Baking Powder
Salt
egg
Blueberries
Splenda
Skim Milk
Extra virgin coconut oil
Myoplex Vanilla flavor Protein Powder
Mix all the ingredients and bake at 350 degrees for about 20 mins or until done.
Good stuff! :)
Healthy Taco Salad
1 lb. ground lean 96% beef or lean turkey
1 pack taco seasoning Old El Paso
2/3 cup of water
1 can of pinto beans
1 green Bell pepper
Grape Tomatoes
Romaine Lettuces
Fat Free Sour Cream
2% skim milk shredded Mexican cheese
Optional: Baked low fat Tostitos

Brown ground meat in a skillet over medium heat until no longer pink, drain the meat of any excess fat and return it to the skillet.
Add water, seasoning,bell pepper, and beans to cooked ground meat, simmer until the sauce thickens, stirring occasionally.
Serve the meat on top of Tostitos or lettuces, then add all the other ingredients on top.
And ENJOY IT!

New member to this group,I have always wanted and tried to eat healthier, but my husband didn't think I should deprive him of the "junk" he liked. So it was hard to prepare a meal for the family. My husband died in Oct. '06,, of many complications from high blood pressure,diabetes, heart disease, & a blood condition,
When he was diagnosed with diabetes in '04,, he we both started a healthier lifestyle,, walking daily, eating more nutritious foods, he dropped about 45 pounds in about 2 months,, he was really on top of things,, I lost some too, not as much as him, he started off around 265,,,but that got old,, he got to the point where he decided the meds he was taking should do all the work,, not so I told him,, but he knew better. Now I am ready to give it another try, I know I can do this,, not just to lose weight, but to feel better and maybe have fewer medical problems in the future,, am taking no prescriptions for any condition at this time, would like to keep it that way,,, Thanks for letting me be a part of this group..I love healthy eating,,,

sweet potato enchiladas
Here is a site that has a recipe for sweet potato/yam enchiladas. would either be very good or very strange I am going to try them to see how they are.

Apricot Almond Chicken
Apricot Almond Chicken
Serving Size : 4
2 tablespoons oil
1 cup onions -- diced
1 clove garlic -- minced
4 boneless skinless chicken breasts -- thawed
1 1/2 cups chicken stock
1 cup sliced sweet red pepper
1/2 cup sliced dried apricots
1/2 cup orange juice concentrate
2 teaspoons cornstarch
1/3 cup toasted blanched whole almonds
Heat 1 tbsp of the oil in a large non-stick skillet over medium heat. Rinse M&M Chicken Breasts and pat dry with paper towel. Brown chicken on each side for 3 mins; remove to plate.
Add remaining oil to pan. Add M&M Diced Onions; cook 7 mins, stirring frequently, until soft. Add garlic; cook 1 min.
Return chicken to skillet. Stir in stock, red pepper and apricots. Bring to boil, reduce heat and simmer 8 mins.
In small bowl, whisk together orange juice and cornstarch. Stir into chicken mixture. Cook 2 to 3 mins, stirring occasionally, until thickened. Stir in almonds.

gound turkey
I was watching a tv show and they were commenting on how ground turkey is 68% less fat than ground beef even the good low fat kind. I use a lot of it myself especially the turkey sausage. Buy it at the local orgainic market and cook it off and put it in the freezer to cut up and use in soups , fried potatoes, or omelets. works really good for me and I love the ease of taking out of the freezer and thawing in the micro then using it. Besides being much better for you than ground beef.
