I know there are a lot of different recipes for this cool, refreshing dessert, here is mine...

3 cans of mandarin oranges
3 cans of pineapple chunks
1 container of sour cream (16 oz)
1 cup of coconut flakes
1 1/2 cups of mini marshmallows

Drain all fruits, mix sour cream, coconut and marshmallows together. Add the drained fruit, mix well and refrigerate overnight.

Pumpkin Bread

1-cup canola oil 2 tsp. nutmeg
3 cups sugar 1 ½ tsp. Salt
4 eggs 2 tsp. baking soda
¾ cup water 3 ½ cups all-purpose flour
1 15-ounce can pumpkin puree or fresh pumpkin puree
2 tsp. cinnamon
1 ½ cups chopped pecans

Combine all ingredients in a large bowl; stir just to blend
Transfer to a greased, floured 1-pound loaf pan and bake approximately 50 minutes in a 350 degree oven.

Miracle Coconut Pie

In keeping with troi55's Cherry Dump Cake, here's a "dump" pie recipe.

4 Eggs
2 Cps half-and-half cream
1 Cup sugar
1 Cup coconut
1/2 Cup all-purpose flour
2 Tbs butter, melted
1 Tsp vanilla
1/2 Tsp baking powder
1/4 tsp salt
Dash of nutmeg
Preheat oven to 325 deg.

Grease a 9-1/2 x 2 in. scalloped foil pie pan, or a 9-1/2 x 1-1/2 in. deep-dish pie plate. Place on a cookie sheet.
In a large bowl combine all the ingredients until well mixed. Pour into the pie pan or plate and bake 55 to 60 min., or until a toothpick inserted in the center, comes out clean.

CHOCOLATE ICE CREAM SANDWICHES

1/3 c. butter, softened
1/3 c. sugar
1/3 c. brown sugar packed
1 egg
1/2 tsp. vanilla
3/4 plus 2 tbs. of flour
1.4 c, baking cocoa
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/2 c. semisweet choc. chips
1 pint vanilla ice cream

In a mixing bowl, cream butter and sugars. Beat in the egg and vanilla. Combine the flour, cocoa, baking powder, baking soda and salt. Add to creamed mixture and mix well.

Drop by rounded tbs. 2-in. apart onto greased baking sheets, forming 16 cookies. Flatten slightly with a glass. Sprinkle with choc. chips. Bake at 375 degrees for 8-10 min. Remove to wire racks to cool.

To assemble sandwiches, place 1/4 c. ice cream on the bottom of half of each of the cookies. Top with remaining cookies. Wrap in plastic wrap and freeze overnight or until ready to use.

Simple Dump Cake

Grease or spray a 9X13 baking dish

Dump 2 cans cherry pie filling
Dump 1 can crushed pineapple
Mix well

Open a box of yellow cake mix and spread evenly over fruit. (no lumps)
Evenly pour 1 cup melted butter/margarine over cake
add chopped nuts to taste

Bake at 350 until golden brown
Serve warm with vanillia Ice cream or whipped cream ENJOY!

Cherry Dump Cake


1 can cherry pie filling
1 small can crushed pineapple,undrained
1 box yellow cake mix
1 cup butter,melted
1 cup pecans
1/2 cup sweetened coconut(optional)

Dump pie filling into bottom of a 13X9 inch cake pan.Spread evenly in pan.Spoon pineapple over the cherries.Sprinkle dry cake mix over pineapple.Pour butter evenly over all.Sprinkle with pecans & coconut. Do NOT stir!! Bake at 325 degrees for about 1 hour.

PASTA FRITTATA

1 lg. onion, chopped
1 tbs veg. oil
12oz.sliced deli ham, finely chopped
4 garlic cloves minced
6 eggs
3 egg whites
1/2 c. shredded mozzarella cheese
2 tbs minced parsley
1 to 1-1/2 tsp. italian seasoning
1/2 tsp each of salt and pepper
Dash cayenne pepper
2 c. cooked angel hair pasta

In a ovenproof skillet, saute onion in oil. Add ham and garlic, saute 1 min. longer. Remove and set aside.

In a large bowl, whisk the eggs and egg whites. Add cheese, parsley and seasonings. Add the ham mixture and pasta.

Coat the same skillet with cooking spray. Add pasta mixture. Cover and cook over med. heat for 3 min. Uncover. Bake at 400 degrees for 13 min. or until set. Let stand for 5 min. before cutting. Serves 5-6

WATER CHESTNUT PEA SALAD

2 med carrots, chopped
1 pkg (16oz.) frozen peas, thawed
1 can (8oz.) sliced water chestnuts, drained.
2 green onions, thinkly sliced
1/2 c. shreddd mozzerella cheese
1/2 c. ranch dressing
5 strips bacon, cooked and crumbled
1/4 tsp pepper

Cook carrots in a sm. sauce pan until tender chrisp; drain and rinse in cold water. Place in a serving bowl; add the water chestnuts, onions and cheese. In a small bowl, combine the salad dressing, bacon and pepper; mix well. Pour over the salad and toss to coat. Refrigerate until serving.

RE; FRIED GREEN TOMATOES

MOM'S RECIPE WAS DELISH AND QUITE SIMPLE.
SHE WOULD DIP THEM INTO FLOUR, THEN EGG THAT WAS BEATEN, THEN BACK INTO THE FLOUR AGAIN..AFTER PUTTING THEM ITNO A FRYING PAN SHE WOULD SHAKE SEASON SALT LIBBERLY OVER THEM. SHE COOKED THEM SLOWER THAN MOST BECAUSE AS SHE SAID:" I DON'T WANT THESE GOOD THINGS TO BURN" THATS HOW I COOK THEM BECAUSE SHE TAUGHT ME HOW TO COOK.

Aunt Pat's Junk Cake

3 cups flour
2 cups sugar
1 tsp salt
1 tsp baking soda
1 tsp cinnamon

3 eggs
1 1/2 cups vegetable oil
1 tsp almond extract

2 cups ripe bananas mashed
1 can crushed pineapple 8 oz.
1 cup chopped almonds

Mix dry ingredients. Beat eggs, oil and extract together. Add bananas, almonds and pineapple and combine. Add to dry ingredients. Mix well, do not beat.

Spoon into a well oiled 10" tube pan.
Bake at 350 degrees for 1 hr 25 mins.
Let cool for 15 mins. Invert onto serving
platter, and dust with powdered sugar if desired when completely cooled.
