Crock pot liquidity
I was disappointed with my 1st pork roast that I cooked in a crock pot. I added no water, but SO much came out in the course of cooking. I have the feeling that I need to see what chicken recipe to use next, but I'm afraid it'll all turn out to be chicken soup from the water in the meat these days. Can you direct me to a chicken recipe taht won't turn into soup? Thanks ~
Mushroomy Roast Beef
A favorite recipe is for a mushroom sauced roast beef cooked all day in the crock pot served over noodles or a good plain or brown rice.
1 good cut of chuck beef roast or any type roast of your choice...size depends on the size of your crock pot.
1 medium onion sliced and layered over the roast
1-2 cans of cream of mushroom soup, undiluted
1/2 cup water plus the liquid from the canned mushrooms
2 cans of sliced mushrooms, undrained
salt and pepper to taste
Cook on low all day. The longer it cooks the more tender the roast gets. Serve the roast sliced over wide noodles, rice, or mashed potatoes. Add green beans or a salad as a veggie...ENJOY!

Ham'n Scalloped Potatoes
1/2 to 3/4 lb. ham, diced
8 to 10 medium potatoes, peeled and thinly sliced
2 medium onions, peeled and thinly sliced
Salt and ground black pepper, to taste
1 cup shredded Cheddar cheese
1 can (10-3/4 oz.) condensed cream of celery or cream of potato soup, undiluted
Paprika, optional
Layer half of the ham, potatoes, and onions in a crock pot.
Sprinkle with salt and pepper, then the shredded cheese.
Repeat with remaining ham, potatoes, onions, salt, pepper,
and cheese.
Pour condensed soup over the top then sprinkle with a little paprika, if desired.
Cover and cook on LOW heat setting for 7 to 9 hours, or until potatoes are tender.
Serves 6 to 8.

Got a book
As usual, I bought a book as the first step in my new area of endeavor: Crock-pot cooking being the activity and SANDRA LEE'S SEMI-HOMEMADE SLOW COOKER RECIPES 2. (Nothing like a short and catchy title.)
The reason I got the book is I borrowed it from the library and liked the big pretty pictures. And I love the energy of Sandra Lee on TV and her approach that you can pretty well fake anything, and then drink the wine that goes into the dish. Maybe I'm frivolous, but a whimsical approach makes everyday tasks so much more enjoyable. Of course, I know she's serious, but to me it's light.
The first recipe I'm planning to use is a Thanksgiving meal in one pot: Turkey, stuffing, green beans, sweet potatoes, all in one pot. LOL Wish me luck!

Winter coming?
We have continuing hot weather, no rain all summer. Drought conditions. I guess I'm looking forward to winter and the Rain - I am looking to buy a new crock pot. lol - Everything is about food. I brought home an armload of books from the library about crock pot cookery. Goody! I know, the crock pot is good for summer cooking, but I am fixated on the rainy season. Have fun, everybody!
Crock Pot Apple Butter
CROCK POT APPLE BUTTER, PERFECT FOR FALL APPLES
Ingredients
16 cups cored and chopped apples, do not peel
2 cups cider
2 cups sugar
1 teaspoon cinnamon
1/4 teaspoon clove
Directions
1- Combine apples and cider in crock pot.
2- Cover and cook on low heat for 10-12 hours.
3- Puree and then return the mixture to the crock pot and add sugar, cinnamon, and cloves.
4- Cover, and cook on low for 1 hour.
5- Apple Butter will keep for several weeks in your refrigerator or you can pour into hot, sterilized jars and seal.
6- Can also be frozen in freezer containers.
