Crock Pot “Hot” Chili.

Crock Pot “Hot” Chili.
Ingredients:
3-4 lbs. LEAN hamburger meat
2 Large onions
2 Large jars picante sauce (HOT)
6 T. Chili powder
8 large chili peppers
3 Large cans tomato sauce
Directions:
Brown meat first. Dice onions and peppers. In 4-6 qt. Crock-pot add all ingredients after meat is browned. I add in this order: Tomato sauce, picante sauce, onions, powder and peppers stirring till all are mixed. Then I add the meat and stir all together. Cook 1-2 hours on medium- high, till the onions are to your desired texture.
Optional:
Beans or rice. I like rice rather than beans, so I add 2 cups of Minute Rice with 3 cups of water/ If you like beans just add "them" things before cooking mixture.

Does any body out there happen to have a really good fruit cake recipe? I am getting ready to make one for the first time and I would appreciate some ideas, if you will?

Crock Pot White Chocolate Bread Pudding

Crock Pot White Chocolate Bread Pudding
Ingredients:
1/3 C. dried cherries or dried cranberries
3 T. brandy or bourbon
1 (3-oz.) bar white chocolate (a high-quality brand, such as Tobler or Lindt)
2 T. butter
6 C. stale French bread cubes
4 eggs
1/3 C. sugar
1 C. half-and-half
1 t. vanilla extract
Soak cherries (or cranberries) in brandy (or juice) for at least one hour, until plumped. Coarsely chop the chocolate bar. Meanwhile, bring all remaining ingredients to room temperature.
Generously butter the crockery insert of a 3 1/2 quart slow cooker. Cover the bottom with half of the bread cubes; then scatter with half of the drained cherries and chopped chocolate. Layer on the remaining bread cubes and top with the rest of the cherries and chocolate.
Whisk the eggs and sugar until smooth; then whisk in the half-and-half and vanilla until well blended. Carefully pour over the bread mixture, gently pressing down on bread to moisten all cubes. Cook on high for 1 3/4 hours, without lifting lid, until set and puffed. Serve warm or at room temperature. Makes 6 servings.

Looks like 2007 is going out like a lion and 2008 will be coming in also like a lion, here anyways. Another big storm due here Tuesday night and Wednesday morning.

Ok Dusted it Off - Now what

I have a small pot - big enough for me - and plan to starting to use it again, but I want better, healthier recipies then what we've traditionally used (please no cream of soups). Has anyone (I'm new so please forgive me if you have covered this topic in the past) tried Indian, Thai or similar recipies in the crock? Vegetarian would be great too! I found that I eat healthier meals if they are prepared before I get home from work.

Party Kielbasa

"This awesome slow cooker or sauce pot kielbasa is made with grape jelly and ketchup. It may sound gross but it tastes good! You can substitute any cooked sausage or cocktail franks for kielbasa."


Slice kielbasa into strips or circles.
Pour ketchup and jelly into a slow cooker. Turn the heat to a medium temperature, stir occasionally while the jelly and ketchup melt together. When the mixture forms into a thin glaze, add the kielbasa and cook until the kielbasa is hot.
