Leftovers to Mexi Casserole

Last night, I took a lot of the leftovers and made a yummy, spicy casserole.

In a glass pie pan, I put:
about 1/3 c. chicken broth
4 corn tortillas (I made sure they were all "washed" with the chicken broth)
chunks of leftover roast chicken scattered across the tortillas
leftover white rice
some cheddar cheese (didn't have any Monterey Jack)
some "Mexican" dry cheese (very pungent and crumbly)
some ancho chilies in adobo sauce (scattered around, not completely covering)
some yellow corn (canned)
some diced green chilies (canned)
some fat free cottage cheese
some more cheddar cheese
a sprinkling of light cream (okay, bad... but I did use FF cottage cheese)

I put this in the oven for about 30 minutes at 350. The cheese melted, and the flavors melded, and it was surprisingly good. Got rid of a lot of leftovers... but we had enough for leftovers for lunch today. LOL.

Mac 'n Cheese

It still hasn't gotten cold enough for Mac 'n Cheese, but it's one of my husband's fav's, so we made it Friday night. Used a recipe from one of the EonsTeam staff from a couple years ago. It really is the best mac 'n cheese!

Shannon's best macaroni and cheese ever!
6 cups milk
6 tablespoons of butter
1/2 cup flour
1 pound cellentani pasta (you have to have this kind. I buy barilla.
it looks like twisty pasta. I have tried with others and it just is not good)
4-1/2 cups of sharp white cheddar
1-1/4 cups grated romano or parm or both chesse
2 cups of mixed mexican cheese
ritz crackers

preheat oven to 375
butter casserole dish

Boil macaroni. Keep aldente. Set aside.
Add melted butter and flour together in large sauce pan and wisk.
Warm six cups of milk.
Pour slowly into sauce pan
Add 3 cups of cheddar, 1 1/2 cups of mex cheese, 1 cup romano (leave remaining cheese for extra layers in casserole)
Turn off burner and add macaroni and mix it all up
Pour mixture into baking dish Sprinkle extra cheese on top Smash up ritz crackers (leave little chunks) and spread on top of casserole
(If you want mix Ritz with 1-2 tablespoons butter first. This makes it even more delicious)

Bake 45 mins
