Mmmmmm, baby!!!

Last night I made garlic and lime pork steaks with mango salsa. The marinade was bottled, and the salsa was simple... just diced up mangos, oranges, pineapple, peppers, onions, and cilantro. On the side, I had steamed asparagus with just a spritz of butter spray and some marjoram, and a terrific taboule salad just popping with lemon and mint. There was a little tossed salad left over from the night before too.

We enjoyed every morsel. And I was well and truly sassified.

Okay, I am Native American, I cuss and Violet said

to join this great group. Now mind you, I am fat, but I like being fat and am proud to be fat. I don't care if I have a little spillage coming over my underwear or if my bra cuts into my skin. I like it, I am healthy and I don't do diets. I am big and beautiful and I wear one feather by my ear.
So, I will be here with some good none or low fat recipes, for for tonight I am going to give you something to die for. One day a week should be cheat day, so here it is.
Green Chile Balls
Categories: Native, Pixel


2 lbs. pork, boiled until well-done
2 lbs. boiled beef
3 cans chopped green chiles, or 1 doz. roasted green chiles, peeled & chopped fine
1/2 c sugar
1/2 c raisins
2 eggs
1/2 c flour
2/3 c shortening
2 sweet onions, chopped fine

Cool meat, put through grinder. Fry onions; add meat, chiles, raisins and sugar.
Mix thoroughly. Cool mixture. Separate egg yolks and whites. Beat whites until very
stiff, fold in beaten yolks, and spoon into a shallow dish. With a little of the flour in one
hand, shape meat-chile mixture into small, egg-shaped balls. Roll in egg mixture until
thoroughly covered, lift gently with spoon and slip into heated fat (sizzling) in kettle.
Keep turning gently until golden brown. Drain on paper.

This food is served as a dessert for weddings and Feast Days in a number of Pueblo villages
Now you can diet anytime and make this anytime, but try it.

You ladies ever get burn marks between your legs. That kills me, so I wear slacks. It was an idea that a young woman told me about and now I am burn free. Any other advice you want, like how to shave your arm pits in those fat folds, is to pull them up and then gently shave them. I found that electric shavers suck, but a good old razor does a good trick. Okay, I am going now. You girls and gents enjoy your evening. Happy Birthday to your lovely daughter tomorrow. I bet you are a good cook and she know sit. Like you sense of humor too. You're a nice lady.

Savory Potato Salad
6 (about 2 lb) medium potatoes
2 stalks celery, finely chopped
2 stalks scallion, finely chopped
1/4 C red bell pepper, coarsely chopped
1/4 C green bell pepper, coarsely chopped
1 Tbsp onion, finely chopped
1 egg, hard boiled, chopped
6 Tbsp light mayonnaise
1 tsp mustard
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp dill weed, dried

Okay, since Violet joined this group, here I am.

Never tell anyone now, but I got plenty of flab on my gut. So you young ladies help me get it off. I love sweets though, so anyone have a good old recipe for a low cal sweet dish. I also could use some meat on my ass, but I don't know how to do that. Bought one of them butt enchancers, but they just didn't make me look right, and if a man pinched me, I didn't feel it. Heck, I could have lost a live one there.
Okay, I am here because I love Violet, but in a good way, no get your minds out of the gutter, not that I mind any other kind of love, different strokes for different folks I say.
Nice group you go there. Happy to be a part of it. Chief, I am going to try all your dishes. Yum, just like you. hehehehe.

Keeping the Heart in Old Family Favorites

Eating heart healthy meals doesn’t mean giving up some of those too-rich favorite family recipes.
With a few changes, you can keep the heart and add the health. Here’s how:

General Substitutions

Milk/Cream/Sour Cream
● Cook with lowfat (1 percent fat) or fat free dry or evaporated
milk, instead of whole milk or cream.
● Instead of sour cream, blend 1 cup lowfat, unsalted cottage cheese with 1 tablespoon fat free milk and 2 tablespoons lemon juice, or substitute plain, fat free or lowfat yogurt or
sour cream.

Spices/Flavorings
● Use a variety of herbs and spices in place of salt.
● Use low-sodium bouillon and broths, instead of regular bouillons and broths.
● Use a small amount of skinless smoked turkey breast, instead of fatback to lower fat content but keep taste.
● Use skinless chicken thighs, instead of neck bones.

Oils/Butter
● Use cooking oil spray to lower fat and calories.
● Use a small amount of vegetable oil, instead of lard, butter, or other fats that are hard at room temperature.
● In general, diet margarines are not well suited for baking. Instead, to cut saturated fat, use regular soft margarine made with vegetable oil.
● Choose margarine that lists liquid vegetable oil as the first ingredient on the food label.

Eggs
● In baking or cooking, use 3 egg whites and 1 egg yolk, instead of 2 whole eggs, or 2 egg whites or 1/4 cup of egg substitute, instead of 1 whole egg.

For Meats and Poultry
● Choose a lean cut of meat (see page 22) and remove any visible fat.
● Remove skin from chicken and other poultry before cooking.

For Sandwiches and Salads
● In salads and sandwiches, use fat free or lowfat dressing, yogurt, or mayonnaise, instead of regular versions.
● To make a salad dressing, use equal parts water and vinegar, and half as much oil.
● Garnish salads with fruits and vegetables.

For Soups and Stews
● Remove fat from homemade broths, soups, and stews by preparing them ahead and chilling them. Before reheating the dish, lift off the hardened fat that formed at the surface. If you don’t have time to chill the dish, then float a few ice cubes on the surface of the warm liquid to harden the fat. Then, remove
and discard the fat.
● Use cooking spray, water, or stock to sauté onion for flavoring stews, soups, and sauces.

For Breads
● To make muffins, quick breads, and biscuits, use no more than 1–2 tablespoons of fat for each cup of flour.
● When making muffins or quick breads, use three ripe, very well-mashed bananas, instead of 1/2 cup butter or oil. Or, substitute a cup of applesauce for a cup of butter, margarine, oil, or shortening—you’ll get less saturated fat and fewer calories.

For Desserts
● To make a pie crust, use only 1/2 cup margarine for every 2 cups flour.
● For chocolate desserts, use 3 tablespoons of cocoa, instead of 1
ounce of baking chocolate. If fat is needed to replace that in chocolate, add 1 tablespoon or less of vegetable oil.
● To make cakes and soft-drop cookies, use no more than 2 tablespoons of fat for each cup of flour.

I need help.....

Last September my mother was diagnosed with Alzheimer's. This made my boyfriend of 5 years realize I might not get a good inheritance and he went looking for another woman. His sister was recently widowed and he could smell her money and now is living in one of her houses. This will all end for him but he is out of here. NOW...I have room in my shop for all my woodworking tools and my sons GYM EQUIPMENT. I have been faithfully working out every other day since April 15. I have a long way to go but I am willing to put in the work, just need someone to tell me to stop with the chocolate. (well not completely)

I'm here and loving it

So glad you started this. I know how to cook and eat healthy, it's doing it regularly. I know all about excercise as I danced (ballet, tap and jazz) for years. It's getting into the habit again. I know what to do, it's getting out of the slump. Well I'm ready and here I am!

OK, ok, ok..I'll shape up!

Got some flab I wouldn't mind moving around...so count me in! I have already started eating only gluten free bread, pancakes, and cooking only with gluten free flours....(takes some practice! buscuits were hard as rocks!) You go girl! I bet we wind up with a spin-off group from here for skinny girls! LOL
