Unfortunately, I won't be online much the next couple weeks. I'm in school for what turned out to me a much more difficult course than I thought, so I need to be studying & studying & studying. I knew it would be a challenging course but it's much more than that. I hope you guys all give basketcaz a hand here.


Kada - Butter Pastry

Yield: 8 Servings
PASTRY:
1 1/2 c Unbleached white flour
1/4 ts Salt
6 tb Unsalted butter melted
1/2 c Water
FILLING:
2 tb White flour
1 ea Egg yolk beaten
3 tb Unsalted butter
1/2 c Sugar
Place flour in a large bowl then make a well in the middle.
Add salt & enough water to make a firm dough.
Knead for 1 min. then roll dough out on a floured board to a 9"X12" rectangle.
Brush dough with 2 tb melted butter, fold into 1/4's, wrap in wax paper then chill for 10-15 mins.
Roll out dough again, brush it with 2 more tb butter, fold then chill.
Repeat it 1 more time then chill.
Prepare the filling.
Place flour in a skillet & fry over med-high heat.
Stir constantly, until flour turns a deep pink, bordering brown.
Do not allow flour to burn.
Add butter then stir until butter melts & mixture is smooth.
Remove from heat, stir in sugar until smooth.
Pre-heat the oven to 350 deg-F.
Dust a 10" pie plate with flour.
Roll dough out to a 9"X16" rectangle.
Cover with filling to within 2" of edges & roll up starting from the longer side.
Using your hands, very carefully stretch the roll to 28".
Seal seam with cold water, then carefully coil it into the pie plate, seam side down, forming a ring around the base of the plate.
Bring ends together & seal well.
Brush ring with beaten egg yolk.
Bake until lightly brown, 45-50 mins.
Remove from pie plate while still warm & cool on a rack.

Panzanella Tomato Salad ~
Fresh ripe tomato wedges
Bread croutons
Dressing made of sherry wine vinegar, evoo, sweet basil leaves, salt, pepper & sugar.
Combine all and allow to marinate for 15 minutes or more, before serving.

Mac & Cheese w/ 'Lobster' ~
Yesterday, I made my usual mac and cheese recipe, adding in 8 ozs. of fake lobster meat (crab also, will do), inspired by a restaurant offering. Made a topping of breadcrumbs and parmesan cheese... it was delish!

This is a week of super easy meals. I will be out of town and my working daughters will be foot sore when coming home...
