Pumpkin Curry

I'm still in the workforce, and I am always looking for quick and easy things for my lunches at work. I bought a shelf stable pouch of pumpkin curry at Cost Plus to try because I love pumpkin and I usually like curry. It turned out to be white pumpkin in a coconut milk curry sauce. I'd never had white pumpkin before. I don't know whether it is the same kind as the white pumpkins you see at Halloween sometimes. The curry was quite good, though a little soupy so it probably would have been better if I'd had it at home where I could have paired it with rice. Pumpkin is one of the few vegetables that isn't available in an easy-to-use form that I like enough to go to the trouble to prepare. I think I will try making some pumpkin curry (with a regular orange cooking pumpkin like Sugar Pie) when they are in season again.
