8:55 a.m. 77 degrees
Who:Sherry
Where:Florida
Weather:Wet, wet, wet, but beautiful

Summer food: So that I have salad garnish on hand all the time: I combine a big container of diced (med chunks) cucumbers, sweet onions, tomatoes and avocado. Add just a hint of cilantro. Add just a little olive oil and balsamic vinaigrette to coat. This is also good combined with hummus and romaine lettuce on a wrap.

and favorite dressings(I love honey mustard or blue cheese)

Sometimes I even toss on boiled eggs or cut up chicken.

Good Morning!!

Becky
Bettsville, Ohio
Sunny and HOT!

When it's hot out I enjoy a fruit salad or chopped veggies marinated in a light Italian dressing.

Name: Annie
Place: Kentucky
Weather: Hot and sticky

Cool summer salad: Makes a big bowl!
4 small cans tuna, drained
1 medium sweet onion, chopped
2 or 3 stalks celery, chopped
3 hard boiled eggs, chopped
1/2 to 3/4 cup sweet pickle relish
8 oz. elbow macaroni, cooked, drained and cooled
3/4 to 1 cup Miracle Whip--enough to moisten thoroughly.

Mix all ingredients in a large bowl, making sure it is moist. It can be made at night for the next day or early in the morning so you don't have to cook during the heat of the day. I usually serve it with fresh, sliced tomatoes and snack crackers. You can also stuff large tomatoes too. Add your favorite beverage (mine is tea) and a light dessert and you are all set for company with little fuss!
