Squash Casserole

1 c. onion,chopped
1/2 stick butter
6 med. yellow squash,cooked,drained well & mashed
3/4 c. bread crumbs,divided
1 egg,slightly beaten
1/2 cup sour cream
1 c. shredded cheese
salt & pepper to taste

Preheat oven to 350 degrees. Cook onion in butter until clear.Remove from heat. In mixing bowl,mix together squash,1/2 c. bread crumbs,egg,sour cream, cheese & salt & pepper. Add onions,mix & pour into an 8x8 baking dish,thats been sprayed with cooking spray.Sprinkle the other 1/4 c. bread crumbs on top & bake for about 25-30 min.Or until nicely browned.

I love fresh veggies but I'm restricted to a low fiber diet. This recipe is a keeper for me. I used to eat cruciferous veggies, beans, greens - not now. Any ideas for other very low fiber veggies - I mostly just eat canned asparagus. Also, what kind of cheese do you use, I was thinking swiss. Thanx
