I have type 2 diabetes. My sugar level is very seldom over 120. The past 2 days, 2 hours after breakfast my sugar level drops to the point I break out in a sweat and get shaky. I don't know what the reading is because I am working when this happens. I will now carry my meter with me at all times just in case. But I can't figure out what is going on. I have coffee with splenda and powder creamer, fiber cereal and silk.
HOT POTATO SALAD...Good Stuff!
This recipe makes two cups of salad. Hard to find a scaled down recipe for a potato salad of this size!
Essentials -
4 slices bacon slices (Typically, one slice of regular cut bacon is equal to one ounce.)
Onion - chopped 1/4 cup
Flour - 1 tablespoon
Sugar - 2 teaspoons
Salt - 1/8 teaspoon (OMG...omit, omit, omit!)
Pepper to taste.
Water - 1/2 cup
Apple cider vinegar - 3 tablespoons
Potatoes - 2 medium, cooked, peeled, sliced or cubed.
I say why bother with this first step? -
1. Cook bacon in fry pan until crisp. Remove from pan and drain on paper towel. Crumble bacon. Discard bacon fat.
Unless you don't mind the mess created cooking this amount of bacon, I say microwave, bake in toaster over, or use real Armour Bacon Pieces in the jar. You can use the equivalent of four full slices as the recipe recommends. Whatever works for you is good!
2. Cook onion in fry pan over medium heat until tender.
3. Mix flour, sugar, salt (?), and pepper.
4. Stir into onion.
5. Gradually stir in water and vinegar. Cook, stirring constantly, until thickened - about 3 minutes.
6. Add potatoes and bacon and mix, ever so gently. Heat to serving temperature over low heat - about 5 minutes.
Done...enjoy!

This game has been popular at Mensa gatherings for years, and has turned up at science fiction conventions as well. It can be called a "title association" game, like "word association" only using titles, such as those of a book, play, movie, or song.
It is played by a group of people who arrange themselves in a circle, with the nonplaying judge (or "Carnelli Master") standing in the center of the circle. The Carnelli Master starts the game by pointing to one of the players and saying a title. Howdy Saturday nighters!
OMG, it's so good to have a computer. My neighbor lent me her laptop for today and tomorrow.
After that, I'll be puterless again until I get to Kansas around the 25th or so.
I was sitting on my couch and had just turned to weather channel to see where the storm was heading, when a gigantic boom hit. It knocked me right off the couch onto my ass on the floor, that's how loud it was. Scared the sh*t outta me. My TV went out and I ran into the computer room and saw all kinds of hallucinogenic colors. I turned it off, but it was too late...it's dead too. Then I started noticing it was getting hot, and I went to the thermostat which is digital and it was blank...no air!
Then I pick up the phone to call the cable company and my phones were dead.
Am I happy to be leaving Florida? Oh hell yes!!! But it had to give me one more kick in the ass.
The ac was not covered for lightening. I don't think anything here is, but I will call my home insurance company on Monday and see if anything can be reimbursed.
So, I'm here for the weekend. :-)

Thought I would let everyone know that Pam is kinda out of sorts for awhile.
She had a slight accident the other day and ended up in ER, and has several stitches in her foot, where they had to dig out glass she stepped on and injured her foot pretty bad.
Let's send her well wishes for the little lady I know is in alot of pain, they don't think there is permanent damage though I understand.
