Italian Stuffed Peppers

This recipe is for 2 peppers:
2 red bell peppers, cut tops off and hollow out. Steam them for 8-10 minutes or lightly boil them & drain to soften. Let cool.

1/3 lb ground beef
1 tsp thyme
Brown beef, drain fat, add thyme, stir and set aside.

1/3 cup rice
2/3 - 3/4 cup water
1/3 onion, diced
1 tbsp parsley flakes
Put all ingredients in a saucepan bring to boil, lower heat to low, cover and simmer for 16 minutes..NO PEEKING.

combine rice and ground beef together. Stuff peppers.

1 jar of you favorite pasta sauce or make your own.
In a deep baking dish spread some sauce on the bottom of the dish, place peppers in dish and bake in a preheated oven at 375 degrees for 45 minutes.
After 30 minutes top peppers with shredded mozzarella return to oven and continue to bake.
