Grilled Eggplant

Why just the other evening, TB and her friend Ada Kay had me grill up some eggplant for ‘em. They prepped it, and I did the grillin’.

So what you do is fire up your grill and then work on the rest.

Find yourself a large sized ‘plant and slice it crosswise in half inch thick sections.

Then you make up the baste using some olive oil, balsamic vinegar and a pinch of some’um or other like dill, and thyme, and basil and oregano, whatever your perclivity.

You can salt and pepper it too. Some folk mince up some garlic. We don’t.

Anyway, wisk whatcha want in a bowl and then brush it onto the sides of the eggplant slices.

Lay the sides out on your hot grill and cook ‘em 5 to 8 minutes a side depending on how hot your grill is and whether you want a bit of char. TB don’t take to char too well.

Now some folk’ll eat it right off the grill without more. Other folk like to use a dippin’ sauce, featuring yogurt or such. Myself, I can’t eat eggplant without Tabasco sauce and a nice char to it.

No Julie, I’ve not grilled apples for nothing. Why, you’ve planted a seed in my mind. Tell me (us) more.

About the only pork I grill is babyback, but an apple could work with that.

Can you smoke an apple? That’d be some’um to give a try.

We use Granny Smith apples
just wash, cut in half and grill
in the lower heat area
other apples tend to fall apart
( we leave on the skin & seeds)

we grill lots of veggies with our meats of choice
and sometimes we marinate them

Tomatoes and garlic we cook slow in the oven
with olive oil,rosemary & garlic

perhaps a thicker type tomato would be fine
for grilling

Try slicing the apple across the core, roll in a floured cinnamon sugar, stack the apple back together, and wrap in foil.
Bake the same as a spud in foil.
Ues caution in opening the foil for steam, and carmalized juices may burn you.

Rusty, we've done that on the grill, apples I mean.
I think we added some butter and raisins to the concoction.

I really think there is almost nothing you can't grill when it comes to veggies and fruit. (Except for maybe the little stuff). Thanks!

I always thought you had to salt the eggplant for a time to be able to cook it.

I guess to salt or not to salt eggplant can be discretionary. I live with a gal who puts salt on darn near everthing. I don’t.

I’ve seen recipes for frying up eggplant and even baking it that call for salt. Maybe a little char from the grill will do you just fine?

Paddy, thanks for the idea! Had one on the grill last evening! Oil, seasoning salt and basil. I agree with the dippin' sauce for sure. My second helpin' I sprinkled on a little parmesan. Will give it a go again sometime.
