Zucchini Sticks

One of the things I've learned to love since I moved back to PA is fried zucchini. Think onion rings only zucchini slices or sticks. You can imagine the calories and points in something like this. I found a delicious 1 point substitute - Oven-Fried Zucchini Sticks - that was featured in the August/September 2005 issue of "Eating Well" magazine. I'd saved the recipe but never tried it till today. It was worth the wait. I made a half recipe and ate it all for 2 points! Paired it with a Boca burger and a small ear of corn and some dill pickles on the side. I used some low-fat ranch dressing I had in the fridge as a dip for it. Not a bad little meal.

Oven-Fried Zucchini Sticks

Cooking spray
1/2 cup whole wheat flour
1/2 cup all-purpose flour
2 tablespoons cornmeal
1 teaspoon salt
1/2 teaspoon freshly ground pepper
1-1/2 pounds zucchini (about 3 medium), cut into 1/2 by 3 inch sticks
2 egg whites, lightly beaten

Preheat oven to 475 degrees F.
Coat a large baking sheet with cooking spray.
Combine flours, cornmeal, salt, and pepper in a large sealable plastic bag.
Dip zucchini in egg white, shake in the bag to coat, and arrange, not touching, on the baking sheet. Coat all exposed sides with cooking spray.
Bake on center rack for 7 minutes.
Turn the zucchini and coat any floury spots with cooking spray. Continue to bake until golden and just tender, about 5 minutes.
Serve hot.

Yield: 4 servings
Per serving: 108 calories
1 gram fat
22 grams carbohydrate
6 grams protein
4 grams fiber
427 mg sodium

Wow! That does sound good! I LOVE fried zucchini. I wonder if this recipe would work with mushrooms and artichoke hearts? I'll have to try it and report back. :-)

Try it and let us know. It might work with onion rings, too. Or I might have one for onion rings hidden somewhere in my stack of recipes to try.

Sounds great! Friends give me lots of zucchini in the summer, and I am always looking for new ways to use it (besides my FATTENING zucchini bread.)

I found a recipe for onion rings in one of my cookbooks - a WW book - that I'm going to have to try. It's only 2 points for a serving. If it's good, I'll pass it along as well.

I'm going to use the other half of a zucchini tonight and maybe cut up some eggplant as well. Might even throw in a few onion slices. I've also thought of adding some spices to it. Maybe chili powder and smoked paprika? I've used that combo on air popped popcorn and enjoyed it. Might be interesting with the vegetables. And, the spices won't add any points, so why not try?

This sounds yummy. I'm having trouble journaling. I know that I need to and that it helps. I just can't seem to remember to do it. "sigh"
