I brush my fish with olive oil or egg white, then roll/dip in crushed walnuts. I grill it but it can be baked as well.
Tilapia filets are a mainstay at our house...however, I usually just salt & pepper, lightly dust with flour, then saute in a butter/olive oil, squeeze of lemon and serve.
If I were to bake it, I would probably use a buttered casserole, salt, pepper, maybe some milk and thin onion slices under fish and Bake @ 350 for about 25 -30 mins.
Try your fish with olive oil (spray from the can works great for fish, or anything that you bake and you want a light oil crust), anyway, first squeeze lemon, then spray, then sprinkle some tajin on it. This is a fantastic flavoring for fish, chicken, pork, and believe it or not fruit! Be careful to cook the fish only until it flakes so it is not dry. Enjoy! CelesteCards
