I make veggie-bergers. Process large stalk of celery, 2 medium onions, 2 carrots, a half green pepper and a big handful of walnuts until it is chopped with a bit of texture. Heat a small amount of oil in a frying pan, add the above mixture and cook until soft (5 to 10 minutes). Process a half block of Tofu with I egg. Put in large bowl and add the vegetable mixture to it. Add enough breadcrumbs to make a consistency that will hold together. Add small handful of chopped parsley and salt and pepper. Make into a patty and dust top and bottom with flour. It should make 6 patties. Wipe out the frying pan you used before and add a little oil. When heated add the patties and cook with medium heat 5 minutes on a side. That's it. Simple. I'm a vegetarian but my kids aren't and they like them too. Serve on a roll with the usual that you would put on a hamburger. I live alone so I freeze some of them. The second and third night when I have one, or when I have defrosted one, I put it in a microwave safe dish with a SMALL amount of water, cover and microwave. Experiment. I do 3 minutes at 6. See what works for you. The first time check after 2 minutes and keep checking as you add more time. If you microwave too long they get hard and awful.
