Sliders with Shallot-Dijon Relish
(White Castle is the oldest American hamburger fast food chain. It's known for it's square burgers, sometimes referred to as "sliders" [officially spelled and trademarked as "Slyders"]. I don't recall that White Castle used this dressing - if they had, they might still be opening new restaurants!
We threw a pool party/buffet for the neighborhood over the weekend and one of the hits of the buffet table, along with baby back ribs, pulled pork sandwiches, potato salad, cole slaw, beer, soft drinks and 'Ritas, were these sliders. Both the kids and the adults loved them and I was kept busy at the Weber grilling dozens of these small burgers, while Mare was in the kitchen making more dressing. No other condiments are necessary except dill pickle chips and the dressing, which is delicious and adds a unique flavor to the small burgers.
The recipe below makes only 8 sliders, so if you are having guests, or serving heavy hors devours at a cocktail party, be prepared to make a bunch more.
Ingredients:
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 pound ground sirloin
8 Parker House rolls
Cooking spray
For the dressing:
3 tablespoons finely chopped shallots
1 tablespoon Worcestershire sauce
1 tablespoon Dijon mustard
2 teaspoons butter, softened
16 dill pickle chips
Preparation:
1. Prepare grill to medium-high heat.
2. Combine 1/2 teaspoon salt, pepper, and sirloin. Divide meat mixture into 8 equal portions, shaping each into a 1/4-inch-thick patty. Lightly coat both sides of patties with cooking spray. Place patties on grill rack; grill for 3 minutes on each side or until done.
3. Combine shallots, Worcestershire sauce, mustard, and butter in a small bowl, stirring well. Cut rolls in half horizontally. Spread shallot mixture evenly over cut sides of rolls. Layer 1 patty and 2 pickle chips on bottom half of each roll; top with top halves of rolls.
