Chicken- Corn Chowder (PA DUTCH)

I had several cooked cobs of corn, so I remeoved the kernels and added them to a 2 cups chicken broth, added diced onion, salt, pepper and a 4 oz. can of boned chicken. Simmered awhile, then added 2 Tbsp. butter and 1/2 cup dry instant mashed potato, wisked it until smooth and thickened, then added a can of low fat evaporated milk, lowered heat to warm for 15 mins., then served. Delicious and easy!

Thanks for this recipie - I can't wait to try it. I used to make Chicken Corn Chowder for my family but didn't know how to cut it down.

Just saw a similar recipe in a magazine (Bon Apetite- Jan.,'08)...with crab meat rather than chicken and clam broth for the chicken broth.
