STUFFED ONIONS

this takes a little work but you will like the results.
6 large sweet onions
1 lb groud beef
1/2 lb bulk italian sausage
1 package 10 oz frozen chopped spinach. thawed and drained.
5 slices day old bread, crumbled
1/2 to 2/3 cup beef broth
1/2 cup parmesan cheese, grated
1 beaten egg
1 tbs parsley flakes
pinch of salt and pepper
pinch of ground nutmeg
peel onions and cut 1/2 inch off top and bottoms. place in sauce pan, cover with water. cook till tender about 15 minutes.
drain.
cool onions and carefully remove inside layers of onion to form 6 onion shells. refrigerate remaining onion for future use.
in a lg. skillet brown beef and sausage, drain excess fat.
add spinach, cook 2 minutes, remove from heat and stir in remaining ingredients.
spoon into onion shells.
place onions into a greased baking pan.
bake uncovered at 350 degrees for 20-30 minutes.
this is great with a light cream sauce...

Hi vinny, my very best friend from high school who is Middle Eastern makes stuffed onions, grape leaves and peppers, all with the same ingreidents. Ground beef, rice, lemon juice, not sure of her spices, but hers are awesome. ....Love veggies that are stuffed. Thanks.

Did you mention that you are doing a 'cookbook' of some sort? Have you PMed BrotherWilliam to collaborate on the idea? Seems like he's working on an idea...course, don't know if two male 'cooks' can be in the kitchen at the same time!

I enjoy the recipes that you post. And whoever asked about MiddleEastern cooking, they usually use lamb, instead of beef. And never(or extremely rarely) sausage, due to it being mostly pork....verboten in the religious/culture of the area.

I'm not a fan of onions, unfortunately. That's the bad news.

The good news is that your stuffing will go great in bell peppers, tomatoes, cabbage leaves or collard greens.

Side note I: For those who don't like the appearance of cabbage leaves, or who find getting the leaves into a pliable conditioin is a hassle, collard greens make an admirable substitute.

Side note II: A drizzle of veal demi-glace or balsamic vinegar reduction over stuffed leaves is a nice touch.
