Morel Mushroom Recipes

The morel mushrooms are out here in N/W Michigan. It's been kind of cold and the black morels were very few and far between, but I've seen the white morels out now. We have had cold weather and not much rain.....but yesterday we did get rain and tomorrow is going to be warmer, so the pickers will be out and most likely find many.

Does anyone have any morel mushroom recipes?

The WashingtonPost just had an article today on Morels. You might find it interesting. It has been a great spring for shrooms in my part of Virginia.

I found this recipe that uses Morel Mushrooms, Wild Ramps and served with Asparagus. All are in season in N/W Michigan right now.

This Sauce looks good.
I've only cooked morels in a simple way and don't have any experience with cooking with cabernet, so what do more experienced cooks think of this recipe?

Morel Mushroom Cabernet Sauce
2 ounces pure olive oil
16 ounces morel mushrooms
4 garlic cloves, minced
6 ounces cabernet sauvignon
6 ounces brown veal stock
2 T. fresh thyme
4 T. butter

In a skillet with oil, saute mushrooms until tender.
Add garlic and allow to brown lightly.
Deglaze skillet with cabernet and reduce by 3/4.
Add veal stock and reduce by half.
Add thyme and finish with butter.
Season with salt and pepper.
Keep warm until ready to serve.

This is served over Grilled Peppered Beef Tenderloin

Hasnt been warm enough or humid to make them pop up around here yet. We mostly made them by seasoning flour and frying in butter...But I have put them in sauces and they add great flavor...Great picture.
