IT'S A DREAM MAY 25TH!!!!!!

i got my birthday wish this year!!! may 22nd is practice for the monaco grand prix and i get to watch it before i go to work!!!! may 25th starts with the monaco grand prix with indy following at noon!!!! now that being the case i just gotta cook!!!! peg wanted ribs for indy and will make her killer potato salad to go with it.
so here are my two menus;
7.30 am monaco grand prix----------------
smoked english bangers
smoked whole smelts
1 case foster's best lager
12 noon indy 500---------------------
3 slabs of baby back ribs marinaded 24 hours in rub and bourbon and honey
potato salad
1 case of miller's (good union made beer!!!)
leftovers------------------
well i guess those could be eaten watching a taxi cab race that comes on later.
ah yes man that will be one great weekend!!! i get to use my rusty trusty weber copy bullet smoker,see real race cars (why floyd them things gots no doors or fenders!!!) and relax and toss greyhounds the bones!!!!!!! and since it's monaco the camera guys are always scanning the bayfront for the girls on the boats and not a one of them looks like loretta lynn!!!!!!!!!

it just keeps getting better!!!! peg,who is a registered mammographer, just found out about a motorcycle concourse show this saturday. admission is 10/person with all proceeds going to breast cancer research and she DEMANDED that we attend!!!! so seeing a golden oportunaty i said sure if i can go as "harley boy", no helmet and at a high rate of speed!!!! well we are going,full face helmet,jacket with spine protector,shoulder and elbow armor but AT A HIGH RATE OF SPEED!!!!!! oh and the vet called the new greyhound came out of surgery ok so we's looking good here!!!!

Was a time way back when the rivers here ran silver with smelt come Febuary or so.
We would go down to the river, and in short order we would dip out all the smelt we would need for the year. some fellas would fill their pick up trucks with the smelt.
It is in this abundance of the little silvery fish some people took to simply tossing the fish in a brine and then smoking them heads guts and all.
Yup, cleaning a ton of 7-10" fish can get a little brain nimbing to say it politly, many simply did the fish just the way they came from the river.
As they purge themselves when they come out of the ocean, there really isn't much of anything in the innards, and you really don't notice much when you chew on them any way, well there is a bit of a crunch. (Folks in the South suck crawdad heads!)
I was sort of brought up dainty by my mom when it came to smelt, as she insisted they were gutted and the head removed.
When cooked it made it much easier to grab the fishes tail in one hand, and flake at the fillet in the down side with a fork. Done just right the whole fillet of that side would simply peel off. Turning the fish over and repeating the process would leave you holding the complete backbone with the ribs intact.
With the States greed for tax monies, and monies for commercial licenses, the smelt fishery here was nearly wiped out, the predeter species in the river now prevent the smelt from getting back to where it used to be, it is so sad.
Hot rods, motorcycles, and bronzed beauties lounging around without tan lines! Along with good BBQ, topped with smoked smelt, dang, I sure am jealous!
