Mexican rice

Our family had a 'mexican potluck' on Sunday. Here's one of the dishes i made.

1 cup raw, long grain white rice
2 TBS. vegetable oil
1 can(14oz.) chicken broth
1 small onion, chopped
1/2 cup yellow bell pepper,diced
1 fresh jalapeno pepper, chopped
1 large tomato, chopped
2 chicken bouillon cubes
1/4 teaspoon ground cumin
1/2 cup chopped fresh cilantro
1 clove garlic,diced
2 TBS. butter
salt & pepper to taste

In a medium sauce pan, cook rice in oil over medium heat for about 4-5 minutes,or until it starts to brown. Pour in chicken broth, and bring to a boil. Stir in onion, yellow pepper, jalapeno,& tomato. Then add bouillon cube, cumin, cilantro, garlic,butter, salt & pepper & mix well. Bring to a boil, cover, and reduce heat to low. Cook for 20-25 minutes,till rice is tender. A good side dish & very colorful!
