I'm not sure I have the answer, but I've begun wrapping celery, carrots, peppers, and most other foods in my refrigerator vegetable bin tightly in plastic produce bags. It seems they are staying fresh and crisp longer. I also make that the foods are dry and excess water has been removed before wrapping. I remember that Tupperware sold containers to keep cut celery in, but I never used them. I go with the bags! I eat a lot of fresh veggies and will be watching for other suggestions. I have had great success with these green bags I purchased from QVC - I've seen them advertised on TV as well. It is amazing how much longer veggies and fruits stay fresh and crisp. You can also wash the bags out and reuse them.

celery can be cut up and placed in a bowl of cold water. It will stay crisp for quite awhile.
I read that to wrap celery in aluminium foil is the best way to keep celery crisp. You can unwrap and rewrap as needed.
Aluminum Foil! I read somewhere that celery keeps longer in aluminum foil so I tried it and it definitely does! I can't tell you how much longer, but I know waste a lot less of it. Don't wash it first though. I noticed that celery wrapped up in foil right from market keeps longer than celery I wash and wrap up in foil.
