West African Vegetarian Soup
2/3 cup roasted peanuts
2 tsp vegetable oil (I use canola)
2 cups chopped onions
6 cups (1") cubed peeled sweet potatoes
1 tablespoon ground cumin
1/2 teaspoon black pepper
1/4 teaspoon salt (I don't use salt)
2 (15 1/2 oz) cans chickpeas, drained
2 (14 1/2 oz) cans vegetable broth
1 (15 oz) can black beans, drained
1 (28 oz) can diced tomatoes, undrained
Flat leafed parsley sprigs (optional)
Place peanuts in food processor and process til smooth (about 2 minutes) scraping the sides of bowl once.
Heat the oil in a large pot over med. heat. Ad onion, saute 7 minutes or til lightly browned.
Add peanut butter, potato and ingredients to parsley, bring to boil.
Reduce heat, simmer (uncovered) 30 minutes or until potatoes are tender.
Garnish with parsley if desired.
