Grilled Asian Ginger Beef Skewers

In case you get a little hungry on VSO day, while waitin' for things to get done, you might make up a batch of these easy skewers. On the grill they're fully cooked in just a few minutes. You can make up a bunch of 'em, use what you need and freeze the rest. Then grab a few out of the freezer when you're in the mood.

You'll need 1 Sirloin steak , about 1 inch thick, cut into strips, lengthwise

For the marinade:

1 C Soy sauce
1 12-oz bottle Japanese beer
2 Tbs Peanut oil
2 tbs Sesame oil
1-1/2 tbs Seasoned Rice Wine Vinegar
1/2 bnch Cilantro, chopped fine
1 tbs Grated ginger
2 Tai chiles, chopped fine or 2 tsp crushed red chiles
3 cloves garlic, minced
1 tbs Sugar

Bamboo skewers soaked in water (to keep 'em from burning while grilling)

Puree the soy sauce, beer, both oils and the rice vinegar together in a blender. Pour into a large non-reactive mixing bowl and add cilantro, ginger, chiles, garlic, and sugar. Whisk well.

Pour marinade into a large zip-lock plastic bag and add steak strips.

Marinate in the frige for about 4 hours, turning every coupla hours.

Thread meat onto skewers and grill until cooked all the way through.

Makes about 15 skewers depending on the portion-size you choose.

No special dippin' sauce yet, Lemon, but I'm open to suggestions! Need somethin that won't clash with 'Ritas!

Sooner, it would depend on what your lookin for. You want something that would cool the heat of those Thai chilis? Or something sweet again the sour 'ritas? Or something hot, so you burn out those taste buds?

Lemon, somethin, sweet might be good. I'm kinda partial to the sweet/sour thing. Sorta like someone here in the cue group . . .

Do you have a CostPlus/World Market there? Cuz I can make this easy for ya. And I'm not sure Paddy would like you talkin like that about him!!! :-)

Who me? Why, I’m chillin! This Asian Beef Cha’callits don’t look half bad.

TB often calls me sweetie when I start giggling while sippin on my Stinger; a la Cary Grant.

'Mornin' Lemon. Yep, we do have a coupla them Cost Plus/World Market places in the general area, so bring it on. (And as for that "sweet/sour someone" I refer to, that'll remain my secret). Altho I must admit, I am partial to them 'Ritas of Paddy's . . just hope they don't do to my head what they did to his!!

Be afraid Sooner...be very afraid! I stopped drinkin! Don't know if that was Paddy's doin or not....
But seriously, I used to make a sauce that, by hand, was a pain, because the ingredients had to be cut into these little, itty, bitty pieces. Then I discovered the Blue Dragon brand of sauces. I did see them in one grocery here, but I can't remember which one.(Not the one in my town, for sure) Anyway, I get them from Cost Plus/World Market. They really are good. So I stopped making this sauce from scratch! Now, when I find them in stock, I get several bottles. They have caught on here, and they sell out fast! I asked the clerk if they had any more, and she told me they sell out as fast as they are put on the shelf, and they were having trouble keeping it stocked.
So, it's Blue Dragon Thai Sweet Chili Dipping Sauce. My favorite. They also make a hot one, but I don't like it as much. I figure I can always add some itty, bitty peppers if I want the heat. Now, serve it warmed, and you might want to thin it just a little with a tablespoon or two of chicken broth, or not. But it is good. Especially over fried chicken wings. You might not go back to making buffalo wings. Add some fried basil, and you have a kickin' appetizer.
Told you this was an easy "recipe", didn't I?
