Cool down the Fiery Food with This
Well, being a native Californian, this is when our weather warms up. So this is usually the first best chance for a barbeque. Or at least something from the grill. But you always need a good coleslaw, right?
Spring Mix Coleslaw
Combine in large serving bowl:
1 head of green cabbage, quartered, cored, and sliced thin
1/2 of red bell pepper, chopped fine
1/2 red onion, chopped fine
1 celery stalk, sliced in half lengthwise, then sliced thin across
2/3 cup of frozen peas, defrosted, but not cooked
1 Red Delicious apple, cored, cut into 8 pieces, and sliced
1 carrot, peeled and shredded
1 small can crushed pineapple, drained
For dressing:
1 and 1/2 cups Mayonaise
1/4 cup white sugar
2 Tbsp. cider vinegar
1/2 tsp. mustard powder
1 tsp. kosher salt
1/2 tsp. pepper
Whisk to combine. Pour over salad ingredients, toss to combine, cover and put in refrigerator for at least 2 hours.
Toss again before serving.
Now sit back and relax, enjoy the weather, and say good-bye to those winter blues!!!
