Come on down for some gator ribs, I thought you might like this guy. I have had and love gator tail, never had gator ribs, how bout you?

Back when I lived in the LSS, we’d combine alligator tail and rattlesnake in making chili. It weren’t that bad. Crab Boil is my secret for chili; not too much mind you. It is just as well Newt don’t know this. He can’t figure it out.

I’ve smoked and grilled alligator tail too, but not the ribs. I didn’t get real fancy with gator; used a lemon pepper rub on it. These days, I smoke what’s local. No gators here.

To my memory, it’s got a range turkey kind of flavor. Kinda mild really. It’s been a long time since I enjoyed smoked gator. TB and I moved from the LSS to the Pacific NW in the Big Mosey of ’92.

Do you smoke your own gator? What kind of rub do you use?

Oh no Paddy, I go to a place on Lake Weir, called Gator Joe's. The main fish we put on the grill is Salmon and I love that. My son catches and frys sea trout, uses Old Bay a lot. I like redfish too. Tuna on the grill is good too.
I have never had snake, but would try it if I had the chance. Had cooter when I first moved down here and again a couple of times over the years. The local politicians like to have thse big wild game events at Silver Springs and some places out in the Ocala Forest. I attended a lot of them when I worked at the chamber of commerce. Met Jeb Bush. He and I had a brief chat about fishing. Big deal,lol but the food sure was good.

Being from Bayou country, I have eaten some good gator-but never had it smoked. I guess my favorite is fried, stewed, and sausage.
