Apple Bread from down in Mayberry
Apple Bread
2 cups sugar
1 cup oil
3 eggs
3 cups all purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
2 teaspoons vanilla extract
2 cups peeled chopped apples
1 cup nuts
Grease and flour two loaf pans. In a large bowl beat together the sugar, oil, and eggs. In a separate bowl sift together the flour, salt and soda and cinnamon. Add the dry ingredients to the sugar mixture. add vanilla, apples and nuts. Pour the batter into the two loaf pans and bake in a 325 degree oven for one hour. Cool ten or fifteen minutes before removing from pan. Wrap loaves in saran wrap or foil after completely cool. Store in the refrigerator.
Makes two loaves.
