Crispy Cajun Potato Wedges

I got this out of my Cooking for 2 magazine. I really liked it.

1/4 cup 2% milk
1/4 cup mayonnaise
4-1/2 tsp. ranch dressing mix
3/4 tsp. Cajun seasoning, divided
3/4 cup crushed cornflakes
2 medium russet potatoes

In a shallow bowl, combine the milk, mayonnaise, dressing mix & 1/2 tsp. Cajun seasoning. In another shallow bowl, combine cornflakes and remaining Cajun seasoning. Cut each potato into 8 wedges, dip in mayonnaise mixture then coat with the crumbs. Arrange in a single layer in a 15-in X 10-in X 1-in baking pan coated with cooking spray. Bake at 375 for 45-50 minutes or until tender and lightly browned, turning once. Yield 2 servings.

Instead of using bowls I used 2 ziplock bags.

Way to go with the "zip-locks"! A quick and easy way to enjoy the fragrance of Cajun seasoning as well as the taste! Does it appear to you that the amount of "wedges" your recipe makes would fit on the baking pan that fits a counter top toasted oven? Thank you for a delicious "KISS" recipe! ~Deedee
