Iron Chef Recipe - Chicken Victoria
Recently found so many recipes that call for Apricot preserves - it does make many types of food tasty! Here is another family favorite!
Chicken Victoria
3 chicken breasts - 6 halves
1 evelope Lipton onion soup mix
1 8 oz. jar apricot preserves - or peach
1 small bottle Russian salad dressing
Place chicken in pan. Mix remaining ingredients and pour over chicken. Bake at 325 degrees for 1 hour and 15 minutes. Turn chicken and baste. Broil 10 minutes or until brown. Serve with rice.
Original recipe says to place chicken skin side down but I always use skinless breasts. And I have omitted the broiling step and it is still very taste. Enjoy!
