Indoor Country Style Ribs

2 lbs. country style ribs
1 onion, quartered and sliced
1 bottle Kraft Honey Barbeque sauce
1/2 cup apricot jam
1/2 tsp. cayenne
1 tbsp. brown mustard
1/4 tsp. liquid smoke

Heat oven to 350 degrees.

Put onions, then ribs, in 10x13 pan, in single layer. Add all other ingredients to saucepan and heat to combine ingredients. Pour over ribs, cover dish with tin foil, and bake for 1 hour. Uncover, turn ribs, baste, and return to oven, uncovered. Continue to baste every 15 minutes, til sauce has reduced to a rich thick sauce and ribs have darkened, approximately 45 minutes to an hour. Serve.

You didn't save the sauce for a dipping sauce? Maybe as a rich gravy over hash browns in the morning? Could be a bit of hot sauce and turn the chips loose on the sauce as a dip.
Those drippings are good till they are all gone!

I do mine in a crock pot. Start6 them in the morning, and come home in the evening to find them near falling apart tender. (There is no doing them all day in the crock pot and remaining in the house with them! One can seriously dammage himself trying a stunt like that.)

A’course, she is easy about what constitutes barbecue.

“Paddy, let’s have a barbecue!”

Why, I think she thinks her guacamole is ‘cue? Now, she likes Lawrey’s seasoned salt in her avocado with a little lemon juice. And that’s it.

To me, that’s not ‘cue. But to her it is. And she is GRITS!

To me, can you have ‘cue without some kind of meat that has been grilled, charred or the like?

But in the winter time, my standards become laxidazical. I’m willing to eat oven barbecue, ‘specially Lemon’s Country Styles.

My Country Styles video salute to Lemon’ on UTube is a big hit with all my fans. And they all think it is ‘cue too!

Lemon;
In nicer weather I have been known to do country style rib's in my dutch oven, sitting on coals, and some coals on the lid.
Now when expecting snow any day now, I put a nice picture of a fire on my monitor, a tall frosted glass with something wet in it, and suffer the pangs of starvation as I endure the scent of my supper slowly cooking away.
I know this isn't authentic barbecue, but it is an excellent excuse to hold that frosted glass, and pretend.
