Turkey Croquettes

This is my Mom's recipe. She cooked turkeys all through the year and would make these up and freeze and always send some home when we visited.

Turkey Croquettes

1/2 cup diced celery
1/2 cup chopped onion
Sautee in 1/2 stick butter
Add
4 cups diced turkey
3 cups turkey or chicken stock
Bring to a boil
Mix
1/2 cup flour
1/2 cup corn meal
2 tsp poultry seasoning
salt and pepper to taste
Add to the boiling turkey stock mixing well and cook for 5 min until very thick. Chill all day or overnight.

Make croquettes, roll in flour, dip in egg and milk mixture, roll in cornmeal and fry.

This kind’a sounds like a hush puppy recipe with turkey thrown in.

If a recipe includes cornmeal, it has my attention.

Myself, I favor a hush puppy – grits combo. And you can add turkey or whatever to the mix. A little Jimmy Dean’s Hot Sausage don’t hurt, but cook it done first before adding it.

Ingredients:

1 beaten egg
1/2 cup buttermilk
1 cup grits
1/4 cup all-purpose flour
2 teaspoons sugar
3/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon sea salt
Shortening or cooking oil for deepfat frying
Freshly ground black pepper

Method:

In a bowl stir together the egg and buttermilk. In another bowl combine the grits, flour, sugar, baking powder, baking soda, and 1/4 teaspoon sea salt. Add the egg mixture to the grits mixture. Stir just until moist.

Heat the shortening to 375 degrees F. Drop the batter by tablespoons into the deep hot fat. Fry about 3 minutes or until golden brown, turning once.

Drain the hush puppies on paper towels and season with pepper, to taste.
