Roseinbloom requested a homemade recipe for sugar cookies. I got out my Mom's recipe box and found this one. I remember that they were good, hope it works out for you.

Old Fashioned Sugar Cookies

Mix well 1 cup of margarine, 1 cup of sugar,2 eggs and 1 tsp of vanilla.
Then add 2 and 1/2 cups of flour, 1 tsp cream of tartar and 1 tsp of baking soda.
Blend both mixtures together well and chill the dough for about an hour.
Then form into balls and flatten with a glass dipped in flour.
Sprinkle with cinnamon and sugar.
Bake in 350 ° oven for 10 to 15 minutes, or until are
a delicate brown. (gj's mom)

Thanx Gary. I'm gonna try that recipe. I love Sugar cookies, but I have a terrible habit of over cooking cookies. They're done so darn fast. lol

I wonder if the chilled dough slows down the baking and perhaps keeps it from overbaking? I noticed my mom was always checking the cookies......

Cat, every oven is different - hence the 10 to 15 minutes. Sometimes I've had cookies bake in less time although I had the oven set at the recommended temperature. I usually set a timer for a couple of minutes less than the minimum time. I'll check the cookies,then reset the timer.

Another thing that can over-brown cookies is a non-stick surface, especially dark coating.

Golden Gate Scampi
Prepare one box Rice-A-Roni Spanish style rice following directions(Don't forget the can of tomatoes) Pour into oven-safe 1 1/2- 2 quart casserole dish. I spray with Pam first.
Drain and add one small can small shrimp(or equivalent frozen/fresh)
Drain and add one small can mushrooms(slices or pieces)
Add 1/3 cup white wine(optional) I always have a glass while preparing to insure the quality of the wine.
Mix well
Cover and bake for 30 minutes in 350 degree oven.
Serve with crusty bread and a salad. And of course, the rest of the wine.

SWEET POTATO PIE

2 cups cooked and mashed sweet potatoes
2 tablespoons melted butter
1/2 teaspoon vanilla
2/3 cup sugar
1/3 teaspoon salt
3 eggs
1/2 teaspoon cinnamon
1/2 cup cream
2 tablespoons brandy (optional)
1 unbaked pie shell

Preheat oven to 450°F.

Prick pie shell dough with fork before baking. Bake for about 10 minutes without filling.

Combine all ingredients in any order. Mix well with an electric hand mixer until all ingredients are smooth.

Pour filling into precooked pie shell and put into oven on 450 degrees for 10 minutes. Then reduce heat to 350 degrees and continue cooking for 35 minutes.

Serve warm with whipped topping or ice cream. Can also serve warm.

This year we are traveling to a Thanksgiving meal and my wife wanted to do something with sweet potatoes fror a dish to bring. This sounds good Annie.

Catriona, I know my wife would like that recipe. I am not a big fan of shrimp but she is. I am a fan of wine however. I could do half the mixture with chunks of chicken or pork.

These are always a hit at my office:

Pumpkin Chip Muffins

4 eggs ........................................ ......In a large mixing bowl, beat
2 C sugar ........................................ ..eggs, sugar, pumpkin, and
1 can (16 oz) pumpkin .........................oil until smooth. Combine flour,
1 1/2 C vegetable oil ............................bkg soda, bkg powder,
3 C flour ........................................ ....cinnamon and salt: add to
2 tsp baking soda ................................pumpkin mixture and mix well.
2 tsp baking powder ............................Fold in chocolate chips. Fill
1 tsp ground cinnamon .........................greased or paper-lined muffin
1 tsp salt ........................................ ..cups 3/4 full. Bake @ 400' for
2 C (12 oz) semisweet chocolate chips.... 16 - 20 minutes. Cool 10 min.
