If you have been following this forum, you have read about high glycemic carbohydrates and the dangers of consuming them. The good old American diet is killing us. Recently I read that by 2010 75% of America will have a weight problem. Diabetes II is an epidemic in this country and we are exporting it. Diet is the major factor. And high glycemic carbs are a primary food in our diet. Now there is another study pointing out more reasons to eliminate them from your diet. They cause macular degeneration.
What is the glycemic index?
The glycemic index is a ranking of foods based on how they affect blood sugar levels within the body. Foods that rank high on the index (high-glycemic-index, or high-GI foods) cause rapid elevations in blood sugar, while foods ranking lower on the index (low-GI foods) cause a slower, steadier release of glucose into the bloodstream.
The faster the food turns to sugar in your blood stream the higher the index. The higher the index, the more your body has to deal with the excess sugar in your blood. If you do this to your body for years and years the worse it is. Insulin resistance will result then diabetes. Now there is evidence they will rob you of your eyesight.
