FLUFFY BUTTERMILK MASHED POTATOES
INGREDIENTS: 3/4lb. peeled and boiled potatoes, 1/4c. warm buttermilk, 2tsp. unsalted butter, Sea salt and black pepper to taste.(optional) Place potatoes in a large bowl and partially mash. Add warm buttermilk and mix well,mashing potatoes completely. Stir in butter and salt and pepper(if using.) If you like creamy mashed potatoes, add some of the potato water.
