ROASTED BUTTERNUT SQUASH PASTA

INGREDIENTS: 1 butternut squash, 4tsp. extra-virgin olive oil, 1 clove garlic, minced, 1c. chopped red onion, 2tsp. red wine vinegar, 1/4tsp. dried oregano, 2c. cooked pasta, freshly ground black pepper(optional) Pre heat oven to 400 deg. Cut squash in half and scoop out seeds. Spray 1 side of each of 2 pieces of heavy duty foil. Wrap squash halves. Place on baking sheet and bake 1 hour or until tender. Scoop out squash flesh and discard rind. Rough chop squash. Add olive oil, garlic, and onion to a nonstick skillet. Saute until onion is transparent. Remove pan from heat. Stir in vinegar, and oregano. Add squash and stir to coat with onion mixture. Add pasta. Toss to mix. Season with black pepper if desired. Makes 4 servings.
