using the trio above for flavor add salt pepper onion & garlic to make plain ol' potatoes "pop"

You are killing me with your pictures.
I like your trip-dic of spice, but the picture of the russet's and "Yakima Sweet's" is just a bit too hot dang much.
Thank goodness you didn't serve them up, maybe crumbled goat or some other cheese melted in on top! Surely you would have me break my mid winter's hibernation, and trudge my way north, and invite myself to supper! Till spring break up.
Now the rivers are loaded with fish Your girl needs to land a bigin, so it can be roasted up as a side.

Might I also suggest drying your favorite peppers. My brother gave me a bottle of dried, flaked habanero peppers and I love them.

I'll have to look for these at thelocal store. Prices aren't any better here that anywhere else and I'm so close to McCormicks for work that I can tell what spice is being run that day just by the air.

We have food chain here called Shoppers, and they seem to stock more ethnic foods that the other chains in tha area.
Three I just bought, all for less that a dollar are;
Goya Salsita 'pure fire ripe habeneros chiles
Rio Grande crushed jalapeno pepper sauce ( from Costa Rico)
Badia Chili pepper sauce , they use habeneros.

All are great, lotsa heat, lotsa flavor.
