I know! Americans hardly eat fig newtons so I wonder if they would like figgy pudding
whatever it is. What is it?
As with many children from Scottish families, I was raised on stews, soups, puddings and porridge, and they are still among my favorites along with a good medium rare steak, of course.
If I recall, figgy pudding is plum pudding and is very good with a brandy sauce.
I have heard of Figgy Pudding of course, because of the carol, "Now we all want some figgy pudding" but I didn't know that was how it was made. Much easier nowadays with a Cuisinart. I remember having to beat butter/margarine with sugar with a wooden spoon for ages, until your arm got tired, to get the white, creamy consistency they describe. I think I like bread pudding better though.
Recipe on previous on Figgy Pudding one. It is a souffle type pudding.
