You’ll swear there’s meat in this chili!
Veggie Chili
1 Tbs. olive oil
1/2 med onion, chopped
1/2 red bell pepper, chopped
1-2 jalapeno peppers, chopped
1-2 medium sized zucchini, chopped
1/2 lbs frozen corn (thawed in microwave)
1/2 lb. sliced mushrooms
2 cans black beans, drained & rinsed well
1 (15 ounce) cans crushed (or diced) tomatoes
1/2 small can tomato paste
1 (15 ounce) can water (or beef broth)
1 sm.can “Rotel” tomatoes (in the canned tomato section – it’s tomatoes mixed with chilies) Ok to omit if you can’t find them – or use jarred salsa instead)
1 Tbs. brown sugar (or a little less - to taste)
1 Tbs. chili powder
½ t. cayenne pepper
1/4 t. oregano
1/4 t. coriander
1/4 t. salt
1/4 T. cumin
1/4 T. cocoa powder
1/2 (12 oz.) can beer
1/4 c. brewed coffee
In large pan, heat olive oil. Saute the onion, red pepper, jalapeno peppers for 5-7 minutes until soft. Add zucchini, corn, and mushrooms. Simmer until all vegetables are soft and most of the liquid has evaporated. Add tomatoes, beans, etc. (all remaining ingredients) Simmer for 1-2 hours.
