Enviormental Enducment's

Mind you it all started out with, noodles, and spaghetti sauce. . .
That canned stuff is a waste of money, katchup and basil, phooie!
I browned up some ground beef, diced and browned a nasty stinky yellow onion, and was just getting started!
I had a piece of bell pepper, and I slid down the slippery slope of tending to my own tastes.
Ok, I sup a taste here and there, the sauce is too runny, I gotta do something about that, Ok, I guess I can set it to simmer and allow it to reduce to a propper viscosity, but it still is lacking in any virtue at all.
I ran a half pint of canned pepper's and onions through my blender and added them to the mix, and whooee! The sauce began to get somewhat respectable, it almost was something I could be proud to serve to my cowboy friends, but still it was lacking in something.
It is amazing what you can do with chili powder, mace, cumin, cayanne, paprika, and powdered garlic!
The sauce is near perfect as I can ever get it for a halfway decent chili messed up with those silly New York noodles instead of beans!
Before bed, I think I best fill the ice cube tray as I think I will need ice come morning!

Be'in a upstate new yorker, sans about 14 yeres, At the time I was still living there and had met a TexLa girl. We'd cook for each other and one day I was braggin a little about my Chili. She said her daddy made the best ever stuff. So, I said wait an see. When I brought some over to her house and dished it up, she asked what is this?. It's my chili, I said.

She told me if I was goin to continue to call it chili she couldn't eat.
I asked why? Well, no self respecting Texan would ever put beans in there chili, call it somethin else but don't call it chili. Ground beef or chuck steak but no beans.

I still put beans in my chili but then, she ain't around no more.
