Cranberry love

Do you love cranberries? They sure love you! That deep red color indicates that the cranberry is full of healthful anti-oxidants. Studies have demonstrated that substances in cranberries prevent harmful bacteria from adhering to the lining of the urinary tract, preventing infections. It also seems to play a role in reducing incidences of other infections, like gum disease. Those heart healthy phytonutrients also help reduce the damage that can be caused by LDL cholesterol. Isn't it wonderful that something so tasty is so good for you?

Thanks, lemon. I will actually have two Thanksgivings this year. On Wednesday, I will be spending the day at the home of a friend who has to work on Thanksgiving day and she is doing dinner a day early and then Thursday it is off to my sister's for the traditional turkey day festivities.

I will be making appetizers for both, will try to post more about that later.

We do have a few cranberry dishes that we made into a tradition every season.

First there is a couple of very unusual cranberry side dishes, a cranberry relish and a cranberry chutney which Susan Stamberg of NPR brings up every year.
Anyone that tasted these loved them although were quite suspicious before trying them.
(notice the very unusual ingredients in the relish: horse radish, raw onion and sugar and it does NOT include any cooking).

I also have a recipe for a crustless cranberry pie that is very easy to make and everyone that tries it asks for the recipe.
My wife loves it but I am not allowed to make it often because she cannot help herself and eats too much of it.
Instead of trying to wing it from memory I will wait and post it later.

I love cranberries but have to be careful in drinking their juice as it reacts with my medication in a way that could do major harm.

Crustless Cranberry Pie Batter:
1 cup sugar
1 cup flour
1 stick melted butter
2 eggs

Filling:
1/2 cup sugar
2 cups raw cranberries washed
1/2 - 3/4 cup chopped walnuts

Grease 8'' pie pan and mix the filling ingredients and sprinkle on the bottom.
Mix the other ingredients to form a smooth batter. Pour over the top and bake at 325-350 for 45-60 minutes until the top is golden brown.
(can also use ramekins instead of a pie dish)

This is my favorite recipe for cranberry muffins. I'm proud of the fact that Cooking Light published it after I submitted it many years ago. Makes a festive breakfast treat.

Cranberry Muffins

1 cup fresh cranberries cut in half
1 1/2 cups flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 egg
1/4 cup oil
1/2 cup milk
1 tablespoon grated orange peel
1 tablespoon orange juice

Preheat oven to 400 degrees. Beat egg, stir in milk, orange juice, and oil. In a separate bowl, combine flour, sugar, baking powder and salt. Add egg/oil mixture to flour mixture. Mix thoroughly. (you don't need an electric mixer). Fold in cranberries and orange peel. Fill muffin pans 2/3 full and bake for 20 to 25 minutes. Makes 1 dozen.
