Country Pork Skillet
A real go-to dinner utilizing a few convenience foods.

4 boneless pork chops, diced
1 12-oz jar pork gravy
2 tablespoons ketchup
8 small red potatoes, diced
2 cups frozen mixed vegetables

In large skillet, brown pork; stir in gravy, ketchup and potatoes; cover and simmer for 10 minutes. Stir in vegetables; cook for 10-15 minutes longer, until vegetables are tender
Serves 4

Had a coney * tots from Sonic, since I didn't feel like cooking, the kids went & got it for me.

Instead of buying a jar of pork gravy, drain off some of the fat after browning the pork. Add 5 Tbsp flour and make a roux from the drippings and then add 1 1/2 C milk, stirring until thickened, then return the pork and add the ketchup and potatoes and cook for about 20 minutes, then add the thawed frozen veggies.

That, of course, would taste much better and is probably what I would do. Though I will have to admit that every now and then I succumb to not-from-scratch recipes.
