Lack O' Turkey

I decided for the first time in years and years, to cook a small Thanksgiving dinner for me and the R.H. Of course, since Thanksgiving is not a holiday here, in the past I always had classes on Thanksgiving, morning and late afternoon/evening, so never bothered with all that preparation just for the two of us.

But this year, since I am not teaching this semester, and have the R.H. at home, I thought it would be a nice treat.

In the other city I lived in, much much bigger with more Americans, there were turkeys and fixin's in the supermarkets all of November. But here in my little city, where us gringos probably number a dozen, if that, there are no turkeys! NONE. Finally I did find some frozen legs, which the R.H. likes and I don't, and boxed seasoned frozen turkey breast. So I bought that for me. Of course, no stuffing mixes, and how do you stuff a frozen breast anyway? LOL

And up until today, there were no cans or envelopes of turkey gravy. I had visions of trying to remember how to make gravy from scratch. But today. Hooray! Canned turkey gravy. Four cans. I bought all they had.

So looks like Thanksgiving dinner of a sort will happen here after all. I might even invite a few friends. Or not. I'll see how it goes.

Go for it, Marti! Thanksgiving will be a quiet event here too. All the Americans we are friends with in nearby Saudi are headed to points farther afield as the day coincides with "Big Eid" and the companies are shut down for a week.

I told "mi esposa" we shall put up the Christmas tree that day while the turkey is roasting. We will cook all the recipes I stole from my Cajun mom-in-law: Yam-pecan Casserole, Creamed Cabbage and Rice Dressing, Pecan Pie. From my New Orleans roots, Oyster Dressing will be on the stove the night before and in the oven with the bird Thursday morning. BTW: This stuff is awesome as it consists of 2 pounds of butter, 2 loaves of French bread, celery, onions and parsley. Red pepper, fresh garlic. Everyone's invited ;-)

Revision to recipe: 2 STICKS of butter, not pounds...Or is it half a kilo?

running to my fridge to find a stick of butter.....a stick here is 250 grams so two sticks would be just under a lb.

If it's cold enough to have turkey I don't see why you shouldn't.

Stuffing is better baked than actually inside the bird. If you're having baked vegies - pumpkin, potato, carrot - then it's easy enough to have the stuffing there too.

There's no shortage of frozen turkey / chicken / duck in Australia any time of the year. Never yet seen frozen goose though.

I am not baking any veggies. I only have one rack in this oven in my rental house, so veggies will be stove top, stuffing will be in an aluminum foil ball in with the turkey, and dessert will be from the bakery shop. Ta-dah!

Just the THOUGHT of all that butter, OPK, makes my cholesterol numbers shoot straight up off the chart!

I thought that too about the butter MM. A pound of butter sounds like a lot. For me anyway......

THAT'S why the stuffing goes INSIDE the turkey to cook. You don't need any greases in the stuffing, the turkey juice does it for you without adding more fats to the deal.

I haven't cooked for years. It just didn't make sense for the two of us. The older I get the more nostalgic I get. I started to think about all of those wonderful holidays that I had growing up. I decided to have the best of both worlds. I'm going to cook for both holidays but I'm going to rent a house at the beach for a month so that I can do it seaside.

No Thanksgiving dinner here - just another work day. When I get home, I think I'll cook my box of Kraft Macaroni & Cheese, add a can of Western Family tuna (my daughter mailed these to me last month), and have a good bottle of Moravian wine while I am thankful for all my blessings and then try to talk to my family via Skype or Yahoo. They sell whole turkeys in Prague along with all the fixin's, but I will be alone, so there's no point in it for me. Without family, Thanksgiving is just another day.
