I made Hamburger Hash for breakfast.
Hamburger Hash
2 tsp canola oil (or other)
4 russet potatoes, peeled and diced
10 oz (cause that's what I had) hamburger
sprinkle onion powder
salt and pepper to taste
In a large skillet with the oil, lightly brown the potatoes. Reduce heat, cover and cook until the potatoes are tender. Remove to a plate.
In the same pan ('cause I didn't want to do any more dishes) brown the burger; drain. Add the potatoes back in and saute until the potatoes are hot again.
We drizzle this with ketchup; one reason why I don't use a lot of seasonings. You can fix it how you like, adding onion and bell peppers, etc...it's simple and one of our favorite dishes.
I might add that I do not cook the raw hamburger and potatoes together. The potatoes would soak up the hamburger fat and take on a very different taste that I don't find appealing and since the potatoes take longer than the burger the meat would be over-cooked.
When I cooked the hamburger I actually rinsed it with hot water after it was brown, put it back on the burner, allowed the water to evaporate and then added the potatoes back in.
Megan that sounds so good with a couple sunny side up eggs & rye toast.
I had some peach yogurt with some strawberries & granola on top.
cut it out, you two are making me hungry lol
Left over spaggetti or left over lima bean soup is also good for brunch.
It tasts good cold. Or you can heat it up some.
