Creamed onions. Yum,yum. Only about three of us eat it but it wouldn't be Thanksgiving without it !

That sounds scrumptious. I do so love onions but have NOT had them this way.
They are delicious. And so easy to make. My nana always brought them.
Just google it. There's tons of recipes out there. I make a basic white sauce and add about a cup and a half of sharp cheddar cheese. Gives the sauce a nice tang to it. You can use the onions in a jar which I do or boil up the small white boiling ones. Both are good. Add to the sauce, heat them through and plop it all into a casserole dish. Top with bread crumbs and brown it up in the oven. Presto ! A new tradition is born !

I have invited a friend who is vegetarian to join us for Thanksgiving. Our family has turkey for the holidays and looks forward to it. We've never planned for someone who doesn't have this as the main course, so I'd appreciate any ideas you may have that would help in integrating the two.

My daughter is a vegetarian. There are lots of meatless meals for them.They so love vegetable plates. Make mashed potatoes that do not have broth in them. (It is chicken stock) Sweet potatoes are always good and a staple of her diet. black or brown beans are great and wonderful portein. Just don't season with bacon when it comes to vegetables or you can make a dish that doesn't have that in it. Fruits and vegetables are always the main stay. She will have a great time, plenty to eat. and wouldn't want you to worry about anything. There is tofu chicken and Amy's veggie burgers in the freezer section at your grocery store if you want to serve something like that. I love them and keep them on hand for me. (The veggie burgers that is)
Thanks for those tips, Iloveart - especially about the ingredients in dishes (stock, bacon, etc). That is easily overlooked.
I know some folks who serve lasagna at Thankgiving along with the turkey and the trimmings. How about a spinach lasagna or maybe an eggplant dish.
When you come right down to it, besides the turkey, Thanksgiving could be a vegetarian's dream. All those yummy side dishes !

I agree and that is my favorite part of Thanksgiving.
Lots of cranberry salads hot and cold, veggie trays, fruit trays, waldorf salad, sweet potatoes, mashed potatoes, and all those delicious fancy vegetable dishes topped with cheese, and anything else you can think of putting together.
If you stop at a health food store I will bet you can find a vegetarian gravy. My favorite there is a pudding mix that you add to tofu and that is wonderful but then, what about pumpkin pie, pecan pie, and Angel food cake? So much wonderful food for any and everyone that no one will ever feel left out.
Tonight I fixed an Amy's Californian Veggie burger for supper, cooked carrots in an orange sauce, cooked fresh broccoli, califlower and carrots (from Sams in the big bag) added a salad , and shucks, I'm not even a vegetarian. I just love vegetables too.
Ps. I do not sell any kind of veggie burgers, that just happens to be my all-time favorite. lol
