Homemade Turkey Sausage Patties
A quick and easy recipe for classic tasty breakfast sausage patties. Great with pancakes and eggs. This recipe has a mild to moderate zing. Increase cayenne and black pepper if you like more of a punch. Thyme may be substituted for sage, or use both. Serves: 8

Ingredients
• 2 pounds ground turkey
• 3/4 teaspoon ground ginger
• 1 1/2 teaspoons salt
• 1 teaspoon dried sage
• 1/4 teaspoon cayenne pepper
• 1 1/2 teaspoons ground black pepper

Directions
1. In a large bowl, mix together the ground turkey, ginger, salt, sage, cayenne pepper, and black pepper until well blended.

2. Heat a skillet over medium-high heat, and coat with nonstick cooking spray. Form the turkey sausage into patties, and fry until browned on both sides and no longer pink in the center. This should take about 15 minutes.

On instinct, I went ahead and doubled my seasonings, and I'm glad I did. It came out perfect. Plus, I added about 1T of maple syrup...YUM-O! Also, I find the mixing combines with the meat a little more evenly if you mix up all the seasonings, THEN add the meat, then add the maple syrup (opt) and mix it through once more. This recipe is awesome! I'm so glad I tried it! I made turkey sausage, egg, and cheese biscuits. Delish!

The seasoning is great, although I used a bit less salt. I used 1.25 pounds of turkey, and made 10 two-oz patties, and one patty is a serving (half the nutrition data shown).

The nutritional value will change depending on the ground turkey used. Although more expensive, I buy the extra lean (breast only) ground turkey. Be careful if you buy regular "ground turkey" as it often has a higher fat content than lean ground beef. Look at the lean to fat percentage. I always look for ground meat (both beef and turkey) that is at least 95% lean.
