Irish Shepherd's Pie
2 LB ground beef, lean
1 cup onion, diced
1 cup carrots, diced
1 cup celery, diced
1 1/2 cup corn, fresh or frozen
2 garlic cloves, minced
salt to taste
pepper to taste
1/2 Ts nutmeg
1 cup beef broth
2 TB Butter; mixed with 2 TB flour
2 LB Potatoes, cooked and mashed
butter
Cook ground beef in frying pan until brown. Add onion, carrots, celery, garlic, salt, pepper and nutmeg. Lower heat and cook for 10 minutes or until vegetables are wilted. Add beef broth. Bring to a boil. Stir in enough of the butter/flour roux to make a thick gravy to bind the filling. Pour into large shallow baking pan, the filling should be about 1-1/2 inches deep. Cool.
Cover the meat mixture in the pan with the corn. Top with the hot mashed potatoes. Smooth potatoes evenly. Brush surface with butter.
Bake at F 325 for 35-40 minutes.
Zuccinni Pepper Jack Casserole
1/2 C. seasoned bread crumbs
2 lb. zucchini, thinly sliced
8 oz. Monterey Jack cheese, cubed
8 oz. pepper jack cheese, cubed
6 eggs
3/4 C. milk
3/4 tsp. salt
3 tsp. baking powder
5 T all-purpose flour
1 T butter
Preheat the oven to 325
Generously butter a 9x13" baking dish, and coat with some of the bread crumbs. Place the zucchini into the pan, and distribute the cheeses evenly over the top
In a bowl, mix together the eggs, milk, salt, baking powder and flour
Spoon over the top of the casserole, and dot with butter
Sprinkle remaining bread crumbs over the top
Bake for 45 mins in the preheated oven, or until the topping is cooked through
Pick up a piece of the topping and peek underneath to see if it is no longer gooey.

1 (10.75 ounce) can Campbell's® Condensed Cream of Mushroom Soup (Regular, 98% Fat Free or 25% Less Sodium)
1 (8 ounce) package shredded two-cheese blend
1/3 cup grated Parmesan cheese
1 cup milk
1/4 teaspoon ground black pepper
4 cups cooked corkscrew-shaped pasta
Mix soup, cheeses, milk and black pepper in 1 1/2-qt. casserole. Stir in pasta.
Bake at 400 degrees F. for 20 min. or until hot.
Note....................
TIP Use 2 cups of your favorite shredded cheese for the 8-oz. package.
I thought this was really good as is. I used chedder and mozzarella cheese. And regular can of mushroom soup.

Quick & Easy Lasagna-Style Casserole
Love lasagna? Here's a version that's only 15 minutes away
from the oven!

Total Time: 55 min
Makes: 6 servings
1 lb bulk Italian pork sausage
1 cup tomato pasta sauce
1 cup ricotta cheese
1/3 cup grated Parmesan cheese
1 egg
1 cup Original Bisquick® mix
1/2 cup milk
1 egg
1 cup shredded mozzarella cheese (4 oz)
1. Heat oven to 400°F. In 10-inch skillet, cook sausage over medium-high heat 5 to 7 minutes, stirring occasionally, until no longer pink; drain. Stir in pasta sauce. Spoon into 8-inch square glass baking dish.
2. In small bowl, stir ricotta cheese, Parmesan cheese and 1 egg until mixed. Drop by heaping tablespoonfuls onto sausage mixture.
3. In small bowl, stir Bisquick mix, milk and 1 egg with fork until blended. Pour over cheese and sausage mixtures.
4. Spray sheet of foil large enough to cover baking dish with cooking spray. Place sprayed side down on dish; seal tightly. Bake 23 to 28 minutes or until light golden brown. Sprinkle with mozzarella cheese. Bake uncovered 5 to 10 minutes longer or until cheese is melted.
To Freeze and Bake: Spray sheet of foil large enough to cover baking dish with cooking spray. Place sprayed side down on unbaked casserole; seal tightly. Freeze up to 2 months. Bake covered at 400ÂşF for 1 hour to 1 hour 15 minutes or until golden brown. Sprinkle with mozzarella cheese. Bake uncovered 5 to 10 minutes longer or until cheese is melted.
High Altitude (3500-6500 ft): Increase first bake time to 33 to 38 minutes. For frozen casserole, bake 1 hour 10 minutes to 1 hour 20 minutes.
NOTE.......................
Freeze the unbaked casserole in a disposable foil pan, or line your baking dish with foil. Use the foil to lift the frozen casserole from the dish, then wrap tightly and freeze. Pop the frozen casserole back into the original dish to bake.
Serve With ..........................
Toss together a simple salad of mixed greens, sliced plum (Roma) tomatoes and your favorite dressing.

Turkey Enchildadas
Great for leftover turkey coming up thru the holdiays.
1 (10 oz.) can enchilada sauce
1 (15.5 oz) can dark red kidney beans, drained, rinsed
8 (6") corn tortillas
1 cup shredded cooked turkey
3 oz. (3/4 cup) shredded taco flavored cheese
Spray 13 x 9" baking dish with nonstick cooking spray; spray sheet of foil cut slightly larger than baking dish. Set aside.
Reserve 1/3 cup of enchilada sauce. In medium saucepan, combine remaining enchilada sauce and beans; cook over medium heat until thoroughly heated.
Soften tortillas according to package directions. Place 1/8 of turkey on each tortilla; top each with 1/8 of bean mixture. Sprinkle each with 1 tbsp. cheese. Roll up each tortilla; place seam down in prepared baking dish. Top with reserved 1/3 cup enchilada sauce; sprinkle with remaining cheese. Cover dish with spray coated foil.
Bake at 300 for 15 to 20 mins until cheese is melted.

CHEROKEE CASSEROLE
1 lb ground beef
1 T. oil
1/2 cup onions, chopped
1 1/2 tsp. salt
1/8 tsp. pepper
1/8 tsp. garlic powder
1/8 tsp. thyme
1/8 tsp. oregano
1 small bay leaf
1 can (20 oz.) crushed tomatoes
1 can (10 oz.) condensed cream of mushroom soup
1 cup rice, pre-cooked
Cheddar cheese, grated
Brown the ground beef in the oil over high heat
Add chopped onions & reduce heat to medium; cook until tender
Stir in salt, pepper, garlic powder, thyme, oregano, bay leaf, crushed tomatoes, mushroom
soup, and rice
Bring all to a boil; reduce heat and simmer 5 mins, stirring occasionally
Discard bay leaf
Spoon into a 1 1/2 qt. casserole dish
Sprinkle cheese over top of the casserole.
Broil just until cheese melts.
Cheesy Franks-N-Beans Casserole
9 slices bacon -- crisp
32ozs pork and beans
1/4 c brown sugar
2 T Dijon-style mustard
3 T worcestershire sauce
8 frankfurters
8 slices processed American cheese -- cut in strips
Combine Beans, brown sugar, mustard and worcestershire sauce, mix
well. Slit franks lengthwise, arrange 4 strips cheese in each. Pour
half of bean mixture into 1 1/2 qt. baking dish, arrage 4 franks on
top of beans
Place 3 slices bacon between franks
Repeat, arrange remaining 3 slices bacon on top of franks
Bake 30-40 min or arrange in crockpot and heat on low for 8 hrs..

I have some boneless lamb in the freezer that I'll grind up and use in lieu of the ground beef for the Irish Shepherd's PIe.
In the olde days, mutton was used in shepherd's pies, so lamb would be a lighter substitution.
