JimmyD, I made stuffed mushrooms today. I cooked them in the boiler as my oven was in use all day. I crushed some Ritz crackers, added chopped onions, crab meat (real not imitation) and shrimp. I used a little chicken broth for flavor and an egg to keep it together. Then I stuffed jumbo size mushrooms and my oh my, they were fantastic. I've got enough for the whole week. Hubby hates mushrooms, so I'll have to force myself to endure them all week. I saved the stems to use later.
I meant broiler not boiler.
Thanks, Val... not much of a lunch crowd here, I guess; but, I knew I could count on you or Deb for some ideas! I too love stuffed mushrooms. I even make the portobellos, parmesan style with sauce and cheese, baked like you would a chicken breast or veal.
I do have just about everything, I would need... but no fresh mushrooms! I'll keep this in mind for my next shooping trip.
Today, I'll have a piece of leftover calves liver I breaded with Italian seasoned crumbs and fried, served with some sauteed onion and a few strips of those roasted peppers I made on Tuesday!
What ever happened to a plain ole soup and sandwich lunch???
Too much sodium in the canned soup and too many carbs in the bread.
A George Foreman grill is a really handy appliance to whip up a meal in a flash. While one is making a salad, a chop or piece of meat can be seasoned and grilled in 5 minutes.. When peppers are in season, I'll toss them on the grill, too and they are done in just a few minutes.
When I bake lasgna, portions go in containers in the freezer to heat up for a quick lunch or dinner, too. Ditto with stews, spaghetti and meatballs -- chili -- anything that takes an hour or so to simmer.
Soup and sandwich is a no brainer. But the Foreman grill cleans up in a flash, too.
I did something for lunch that I have never done before. I had two slices if cmy Chewbacca bread left (ciabatta) and on one piece I put a slice of ham and 1/2 slice of muenster cheese and on the other 1/2, I put a slice of turkey and the other 1/2 muenster cheese, with a little mayo.
I usually don't let different foods touch and I don't know what got into me, I wanted ham, but I wanted turkey too. It was freakin' delicious!!! :-)
I bought the Foreman grill when it first came out. I used it two or three times and then it went into the cabinet with the bullet, the grilled cheese sandwich maker, the bread maker, the waffle maker, the chicken roaster etc etc.
LOL VB, I guess your garage must look a lot like my sister's! We call it Sherry's Store and my nephew and I get to go shopping in her garage if we need anything. :-)
I have a ton of cabinets in the kitchen and pantry. They go all the way up to the ceiling and my ceilings are very high. When my youngest got married, she came over, opened about 5 or 6 paper bags and jumped onto the counters to open the top cabinets and she helped herself to all the small appliances she wanted. Well, that left me room to buy more! She occasionally checks in them to see if there's anything she wants. When my 15 year old granddaughter was here for the summer, she checked out those top cabinets and I could see the light in her eyes. I'm sure when she goes off to college in a couple of years she'll come visit and bring paper bags too.
Just had a BLT one of my favorite sandwiches....Western is on the top of the list as well.
